(29,949 posts)We like the lighter feel of the sand which dinner. But thats a false illusion because everything you ate hot can go on a sandwich cold.
Anyway, we like that.
Once in awhile I might boil turkey down to soup.

(11,142 posts)I use Duke's mayo, lettuce, and onion salt... (I have had to make my own onion sprinkle nowadays thanks to my failing ticker... damn it... love salt... sux...) But back in the day, I could destroy some sandwiches like those!

(15,463 posts)Miracle Whip, lettuce, salt and crushed pepper - maybe just a dash of garlic, mustard, or horseradish for the adventurous (moi), but don't try that on the kids! This is so much better, and more popular, than the actual bird on turkey day. A variety of different bread types, to accommodate different preference (already mentioned kids, who think pumpernickel is foreign plot to overthrow .. ). And it's also well established that sandwiches work much better when the turkey is chopped into smaller pieces - rather than trying to contend with slices - which regardless their photogenic appeal, are actually a mostly useless affectation.

(23,694 posts)I have made tetrazzini, pot pies, and curry also. My husband used to make crepes and I would use the leftover turkey for a curried turkey filling
Then there is the old classic turkey (or chicken) a la King

(1,230 posts)Turkey stock made from the picked carcass.
So, turkey soup. I like one with black beans, tomatoes, corn, onions, and jalapeños.
Or turkey noodle with carrots, celery, and onions, garlic with a bottle of hot sauce at hand.
DH Happy makes turkey & sausage gumbo, and if theres still turkey left, Turkey pot pie 🥧
This year, hes dry brining the turkey with lemon, salt, and rosemary, then roasting the bird.
Turkey, the dinner that keeps on giving, for which I am thankful.🦃

(1,230 posts)Our daughter was 5 years old, I was teaching science and history to 6th graders. While working on my masters degree in Library & Information Sciences at night for 2 years, with the summer before graduation on campus.
Anyway, he started doing most of the cooking, with our daughter by his side as cook in training. Cooking as science and art, hows that for father-daughter bonding? Theyre both very good, versatile, and creative cooks, cooking with lots of loving care.
I have a few dishes I like to cook, but mostly I love baking. Especially breads.
Today I baked 6 challahs, braided. Enough for four Shabbats with a couple to share. They freeze well, so I can bake them once a month instead of every week.

(15,675 posts)I made a savory pie with all my leftovers - layers of turkey, ham, potatoes, butternut squash with cranberries, green bean casserole, cranberry sauce... I'm probably forgetting one or two layers. My inspiration was a YouTube channel called You Suck at Cooking, where the guy revisited his Sandwich of Justice video but using Tday leftovers.

(60,186 posts)Served over rice. Since our turkeys are 14-15 kilograms, we usually have enough to feed a small army. Maybe not the German army or the French army, but certainly the Dutch army or the Belgian army, if theyre passing through .

(22,564 posts)Take a couple of hoagie rolls, brush them with garlic butter and toast them in the oven, heat the left over turkey in a saute pan with some buffalo sauce until it's bubbling hot and the sauce is nicely thickened, put a thin slice of provolone cheese on that hoagie roll and then pile on the hot buffalo turkey. Add any sandwich fixings you feel are imperative (lettuce, onions, peppers, etc). Then consume with gusto and plenty of napkins.
I also like making turkey sliders out of leftover turkey and King's Hawaiian Rolls. It satiates the desire for a turkey sammich while still leaving room for the best part of Thanksgiving leftovers: MOAR PIE.
But my absolute favourite thing to do with Thanksgiving leftovers isn't turkey at all. I take the leftover stuffing and the leftover mashed potatoes, put each in a separate mixing bowl, add an egg and a little flour and make them each into pancakes. Just before they come off the griddle I put a slice of extra sharp cheddar on the potato pancakes and some caramelised onion on the stuffing pancake and then slather them both with leftover gravy. It's a reason to get out of bed on Black Friday.
