What's your favourite kind of pie?

Or, if you're not a fan of the humble pie (puns always intended), what sort of desserts do you love?*

For me, it's always been key lime. But I do make a lovely bourbon and smoked pecan pie and marionberry is definitely high on the list!

*Yes, I'm aware pies can also be savory, and have some lovely recipes. If you'd like to sing the praises of the Cornish Pasties, Tourtière, Torta pasqualina, Quiche Lorraine or Aussie Meat Pies, etc...Please, don't hold back.

By the way, my brisket chili won first prize.

and they are just not something I would make on my own.

As a child, I can remember my grandmother always having pumpkin and pecan pies and often mincemeat. I'm sure I ate those--baked by a local small-town woman who excelled in all such baked goods. And I'm sure I liked them--especially the pecan. Somewhere along the way, I've had good apple, key lime, and perhaps some others, but not in years. Even at potluck kind of get-togethers, it always seems that cakes, cookies, and cheesecakes have been more the norm for deserts in recent years.

But, now I will probably start craving some pie.

There used to be a pie shop about half way between Miami and Homestead, Fl. on US 1 that made the best pies ever. It was catch as catch can, the owner would make a batch of pies, and when they sold, he would close the doors and go home. This is near the big strawberry farms that were run by what I believe must have been Mennonites, (the ladies wore mesh headgear) in season you could get fresh berries, pies, ice cream or milkshakes. The pies were great, but the milkshakes were worth a drive from Brooklyn to Homestead.

Deep Dish Chocolate Pie

For the crust:
• 25 oreo cookies, finely crushed
• ¼ cup butter, melted
• ⅛ teaspoon salt

For the pie filling:
• 3 ounces dark chocolate (at least 60%)
• ¾ cup butter (1 1/2 sticks), at room temperature
• 1 cup granulated sugar
• 1 teaspoon vanilla extract
• 3 eggs, at room temperature

For the topping:
• 8 oz heavy whipping cream
• 2-3 tablespoons granulated sugar
• To garnish: extra dark chocolate

Preheat oven to 350° F. Grease a 9“ springform pan with cooking spray or melted butter.

Start by making the crust: Place cookies in the bowl of a food processor and pulse for 1-2 minutes or until cookies are finely crushed. Add in melted butter and salt and process again until well combined.

Dump the mixture into prepared pie pan and press into the bottom and side evenly. It should come up at least an inch to an inch and a half on the sides. Bake for 10 minutes then remove from oven and place on a wire rack to cool.

To make the pie filling: Melt dark chocolate in a small saucepan over low heat, stirring occasionally. Once chocolate is completely melted, set aside to cool for 5-10 minutes.

In a large bowl of an electric mixer fitted with a whisk attachment, beat together butter and sugar for 3 minutes or until sugar dissolves into the butter and is no longer grainy. You'll see the butter turn a light yellow/almost white color and become fluffy. Add in vanilla and beat again for 30 seconds. Next fold in melted chocolate and mix again so that the chocolate is well combined with the butter and sugar. IMPORTANT: Make sure that the chocolate has cooled to room temperature, or the chocolate will melt the butter and ruin the filling.

Next add eggs, one at a time, beating for 4 minutes between each egg. You'll want to use the whisk attachment if using a KitchenAid mixer. (To be clear: Add an egg, beat for 4 minutes on medium speed; then add another egg, beat on medium speed for 4 minutes and repeat with final egg and final 4-minute mixing.) Pie filling should be thick and fluffy at this point. If it's a bit runny, don't worry, it should thicken up during refrigeration.

Pour filling into cooled crust and cover with plastic wrap. Refrigerate for at least 8 hours, but preferably overnight.

Once pie is ready to serve make the whipped cream topping: Add heavy whipped cream and 2 tablespoons of sugar to the bowl of an electric mixer; beat on high for 3-5 minutes or until cream reaches stiff peaks. Taste and add additional sugar if necessary and mix once more.

Evenly spread whipped cream over pie filling, then garnish with dark chocolate shavings. How many servings you get depends on how large you cut the slices.

133. Sweet potato pie:
Sun Nov 19, 2023, 05:36 AM
Nov 2023

Bake about 4 medium sweet potatoes at 400 degrees for 50 minutes (prick the potatoes with a fork beforehand). Cool and peel them. Mash 1/2 cup butter and sweet potatoes together in a bowl. Mix in well 3/4 cup brown sugar. Add 2 tsps real vanilla, 1/2 tsp. cinnamon, 1/4 tsp ginger (optional), 1/4 tsp nutmeg, 2 large eggs, and 1/2 cup evaporated milk and mix well. Pour mix into unbaked pie crust*. Bake pie for 1 hour at 350 degrees.

*Pie crust: Beforehand, refrigerate some lard, butter, flour, corn starch, vinegar, egg, and water.

Whisk together 3 cups flour, 1 tbsp. corn starch, and 1 tsp. salt. Add 10 tbsp. lard and 8 tbsp. butter by the tablespoon. Cut in with two forks or pastry cutter until flour and fat are tiny balls. In a measuring cup, crack one egg, 1 tablespoon white vinegar, and cold water to reach 2/3 cup. Beat mixture well. Drizzle in about a half cup of this liquid to the flour/fat mixture and work in with fork. Add little bits afterward until mix is somewhat moist but not too much, some crumbs remaining are ok. Dump mixture on a floured surface and ball it up and wrap in plastic. Refrigerate for about an hour. Take it out and roll it out on floured surface with floured rolling pin. Shape it accordingly and there ya go! It may be too much dough, this is my recipe for apple pies, which has dough on the top whereas the sweet potato pie doesn’t. Enjoy!

Nov 2023

I've had this once back when I was in my 20's (which means it was very long ago). I pressured my mother (god rest her soul) into making it for my birthday--a deep dish peach pie (fresh peaches). My mother didn't like cooking, but I was her only son. It took a few days, but I'm nothing if not persistent. She finally agreed to bake the pie.

She made it completely from scratch. She nailed it. So very good. Has to be great if I still remember how sabroso the pie was.

And not a mincemeat pie made from that weak sauce stuff that one gets in the jar in the super market. A good pie I could always get was at a small Amish farmers market near my home when I lived up north.

We go to the same church and she made one once for a potluck we were having. I'd never had mincemeat pie before that but, being adventurous when it comes to food, I tried a piece of the pie and decided I liked it.

My very first favorite pie was and maybe still is a chicken pot pie, with crust on the bottom and over the top.

Apple! Sometimes a lattice crust, sometimes streusel.
Pondering a cheddar lattice crust with a nod to the Norwegian dairy farmers on my mom’s branch of the family tree.

Cherry! My Grandpa Linus used to bake them for me with a lattice crust.

Blueberry! with hints of lemon and cinnamon. No top crust.
Maybe a scoop of vanilla ice cream.
Takes me back to summertime with my in-laws, of blessed memory, with 500 blueberry bushes to keep picked. Pie was a sweet reward.

Pecan. A brother-in-law made the first and still the best I’ve ever tasted.

And Lemon meringue, one of my husband’s specialties.

And a nephew makes peach hand pies that get rave reviews.

Oh, yeah, I like pies.

When I could eat whatever I wanted to eat, I always enjoyed the No Bake Pies over the Oven Baked Pies.

A few of my favorites of the No Bake Pies were Oreo Mud Pie, Rocky Road Freezer Pie, Cream Cheese Pie, Peanut Butter Pie, Grasshopper Pie and Butterscotch Pie. *Sigh*

We have a local Restaurant/Bake Shop where the owner's had 3 children that all had Celiac Disease. And so the entire place is 100% gluten free, including the desserts. I ordered both the Pumpkin Pie and a Raspberry Cheesecake Pie for Thanksgiving 2023. I'll be picking up my order the day before Thanksgiving.

Here in Germany, they don’t make pies, but Strudel, instead. My wife makes an addictive peach strudel, and will sometimes throw nectarines or apricots into the mix. The neighbors have a sixth sense for knowing when she has baked something, because they always seem to have to come over as soon as she has baked something. She always invites them in, and by the time they leave, her strudel has done a magical disappearing act.
