Or, if you're not a fan of the humble pie (puns always intended), what sort of desserts do you love?*
For me, it's always been key lime. But I do make a lovely bourbon and smoked pecan pie and marionberry is definitely high on the list!
*Yes, I'm aware pies can also be savory, and have some lovely recipes. If you'd like to sing the praises of the Cornish Pasties, Tourtière, Torta pasqualina, Quiche Lorraine or Aussie Meat Pies, etc...Please, don't hold back.

As a child, I can remember my grandmother always having pumpkin and pecan pies and often mincemeat. I'm sure I ate those--baked by a local small-town woman who excelled in all such baked goods. And I'm sure I liked them--especially the pecan. Somewhere along the way, I've had good apple, key lime, and perhaps some others, but not in years. Even at potluck kind of get-togethers, it always seems that cakes, cookies, and cheesecakes have been more the norm for deserts in recent years.
But, now I will probably start craving some pie.

(17,757 posts)There used to be a pie shop about half way between Miami and Homestead, Fl. on US 1 that made the best pies ever. It was catch as catch can, the owner would make a batch of pies, and when they sold, he would close the doors and go home. This is near the big strawberry farms that were run by what I believe must have been Mennonites, (the ladies wore mesh headgear) in season you could get fresh berries, pies, ice cream or milkshakes. The pies were great, but the milkshakes were worth a drive from Brooklyn to Homestead.

(22,564 posts)Deep Dish Chocolate Pie
For the crust:
25 oreo cookies, finely crushed
¼ cup butter, melted
⅛ teaspoon salt
For the pie filling:
3 ounces dark chocolate (at least 60%)
¾ cup butter (1 1/2 sticks), at room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
3 eggs, at room temperature
For the topping:
8 oz heavy whipping cream
2-3 tablespoons granulated sugar
To garnish: extra dark chocolate
Preheat oven to 350° F. Grease a 9 springform pan with cooking spray or melted butter.
Start by making the crust: Place cookies in the bowl of a food processor and pulse for 1-2 minutes or until cookies are finely crushed. Add in melted butter and salt and process again until well combined.
Dump the mixture into prepared pie pan and press into the bottom and side evenly. It should come up at least an inch to an inch and a half on the sides. Bake for 10 minutes then remove from oven and place on a wire rack to cool.
To make the pie filling: Melt dark chocolate in a small saucepan over low heat, stirring occasionally. Once chocolate is completely melted, set aside to cool for 5-10 minutes.
In a large bowl of an electric mixer fitted with a whisk attachment, beat together butter and sugar for 3 minutes or until sugar dissolves into the butter and is no longer grainy. You'll see the butter turn a light yellow/almost white color and become fluffy. Add in vanilla and beat again for 30 seconds. Next fold in melted chocolate and mix again so that the chocolate is well combined with the butter and sugar. IMPORTANT: Make sure that the chocolate has cooled to room temperature, or the chocolate will melt the butter and ruin the filling.
Next add eggs, one at a time, beating for 4 minutes between each egg. You'll want to use the whisk attachment if using a KitchenAid mixer. (To be clear: Add an egg, beat for 4 minutes on medium speed; then add another egg, beat on medium speed for 4 minutes and repeat with final egg and final 4-minute mixing.) Pie filling should be thick and fluffy at this point. If it's a bit runny, don't worry, it should thicken up during refrigeration.
Pour filling into cooled crust and cover with plastic wrap. Refrigerate for at least 8 hours, but preferably overnight.
Once pie is ready to serve make the whipped cream topping: Add heavy whipped cream and 2 tablespoons of sugar to the bowl of an electric mixer; beat on high for 3-5 minutes or until cream reaches stiff peaks. Taste and add additional sugar if necessary and mix once more.
Evenly spread whipped cream over pie filling, then garnish with dark chocolate shavings. How many servings you get depends on how large you cut the slices.

(16,385 posts)Bake about 4 medium sweet potatoes at 400 degrees for 50 minutes (prick the potatoes with a fork beforehand). Cool and peel them. Mash 1/2 cup butter and sweet potatoes together in a bowl. Mix in well 3/4 cup brown sugar. Add 2 tsps real vanilla, 1/2 tsp. cinnamon, 1/4 tsp ginger (optional), 1/4 tsp nutmeg, 2 large eggs, and 1/2 cup evaporated milk and mix well. Pour mix into unbaked pie crust*. Bake pie for 1 hour at 350 degrees.
*Pie crust: Beforehand, refrigerate some lard, butter, flour, corn starch, vinegar, egg, and water.
Whisk together 3 cups flour, 1 tbsp. corn starch, and 1 tsp. salt. Add 10 tbsp. lard and 8 tbsp. butter by the tablespoon. Cut in with two forks or pastry cutter until flour and fat are tiny balls. In a measuring cup, crack one egg, 1 tablespoon white vinegar, and cold water to reach 2/3 cup. Beat mixture well. Drizzle in about a half cup of this liquid to the flour/fat mixture and work in with fork. Add little bits afterward until mix is somewhat moist but not too much, some crumbs remaining are ok. Dump mixture on a floured surface and ball it up and wrap in plastic. Refrigerate for about an hour. Take it out and roll it out on floured surface with floured rolling pin. Shape it accordingly and there ya go! It may be too much dough, this is my recipe for apple pies, which has dough on the top whereas the sweet potato pie doesnt. Enjoy!
