Not greasy,, not dry or overcooked. Her fried chicken was the best.

I could give up steak I suppose, provided there's an exception if it's the chicken fried steak variety. I mean, the chicken part of the moniker is still ok

I pretty much don't eat steaks any more. The cost here for a good steak is ridiculous so it would be special occasion only. Don't eat much beef either. Chicken (duck and goose), pork and fish wre the mainstays.

After saving my life (I had two coronary arteries 99% clogged, and didn't even know it, due to low blood pressure), a cardiologist told me I don't break down cholesterol well, and had to give up red meat immediately. If it walks on four legs, don't touch it. Steak and ribs were out. Shrimp was not good, and nor were fried foods. Ergo............

For the most part, I gave up all of the above, along with butter, eggs, and cheese. I was later told I could have cheese and eggs in moderation.

Luckily my wife is a gourmet chef, along with her other positive attributes, and she does wonders with turkey, chicken and fish. She has some vegetarian tricks up her sleeve as well. That she was able to adapt from one day to the next is best demonstrated by the fact that I am still here to tell the tale.
