(14,521 posts)My husband's favorite, and he's made me a convert. Chocolate, specifically devil's food with fudge icing, would be my second choice. I can't stand red velvet, which I guess means I'm not a true southerner. To me it's just WRONG. The color is off and it doesn't taste right. True story---My first grandson had a tiny red velvet cake to play in for his first birthday. The pictures they took make him look like a child abuse victim! I won't show them to anyone!

(77,083 posts)The traditional version turns red from a high temperature reaction between the amino compounds in cocoa with the acidity of buttermilk & a touch of vinegar.
Also, the same thing happens with free hydroxyl groups on the molasses in brown sugar.
That said, the boxed versions are almost certainly chocolate cake with some powdered buttermilk & food coloring.
The weird your tasting is probably the acidity, which might taste odd given the overall sweetness.

(77,083 posts)...I did some process development work with our flavors & fragrances division.
I learned tons about food chemistry in that 7 or 8 months.
One project involved fracturing glucose & oxidizing it to reproduce the diacetyls & short chain "-oins" to simulate the taste of butter for Mrs. Butterworth syrup. It actually worked, but the capital was too high, so extracting it from butter was actually cheaper.
Fun fact: though carmel is made by dehydrating sugar (removing hydrogen & hydroxyl groups from the carbon in the sugar) the rearrangement of those carbons is so complex & variable that nobody actually knows what compounds are in carmel. We can theorize as to what compounds should be in there, but we can't know just how many are in there or the proportions. Something as simple as carmel!

(19 posts)I know a guy here in Birmingham whos a retired career Hostess baker. Could be apocryphal, but told story of time they had to shut down plant because nozzles malfunctioned overnight causing cream filling to explode and fill multiple rooms and short circuit all the electrical in the factory. I said wow, that must have been a mess to clean up, he said not my department not my problem. One of those things well never prove or disprove but I like to think is true either way.
ETA: He lives in Bham now but think he might have said Hostess plant was someplace in Midwest?

For packaged products, my wife really loves the coconut cake by Pepperidge Farm. She's nuts about it!

(12,810 posts)She loves chocolate cake and brownies. So I make whatever deserts I can with veggies and my daughter just doesn't tell her. We like carrot cake too. That's the closest to spice cake I get to have since I'm the only one that likes spice cake. I also had a raspberry one for
my bday because my daughter and daughter in law couldn't find a strawberry one.
