The first roll sort of melts into the cookie, but that second roll builds up a good layer of powdered sugar that makes these extra delicious

(15,462 posts)The way my mom learned from her Aunts and Grandmother.
Slightly chewy under the icing, slightly crispy on the edges, lots of molasses and ginger paste in the dough, anise tea flavored black outlining icing, vanilla flavored white or colored royal icing, with bits of candied orange or lemon peel, dried currents, blueberries, cherries, or sultanas for decorative buttons, eyes, mouths, candle flames or holly berries depending on the cookie shape or "picture".
Or use the candied /dried fruits and peel for the cookies themselves.
Also, Swedish waffle iron "snowflake" wafer cookies (with or without the aniseed) dipped or glazed with cream caramel to sweeten them.

If it's any type of cookie, those chocolate chunk with the little buts of toffee! I don't know if they gave their own special name.
If store bought, I'd be good with Milanos!

(29,573 posts)I make many, many dozens every Christmas season, for family and neighbors. One batch goes to a young man who is a dear friend of both our sons - all 3 were soccer teammates in college. His mom also makes Spritz cookies, but he confided in me that he likes mine better, and pleaded with me not to ever tell her that. I assured him that, of course, I would never do that.
I like them ever-so-slightly underbaked so they are soft and chewy.
