(I always use of stainless steel thermomug because I'm really persnickety about it being hot.)

In the thermomug, there's no added energy so those reactions actually slow down.
The complex alcohols & aldehydes oxidize to carboxylic acids which create sourness & a less pleasant bitterness.

My son actually found the pair of them sitting on someones trash binprice tags on ($24 each!)in a Mennonite neighbourhood, of all places. Nice stainless steel mugs on the inside. For some reason, hes been unwilling to use them so I got them by defaultone for work and one for home.
