Vegetable question

Mom and I just returned from the farmers market. I had to nudge her into buying a bushel of green peppers ($8). She didn't want to, and I said I would cut them and put them in the freezer, because during the winter we will want peppers and the price for one pepper will be at least $1. So she acquiesced and I have them in the kitchen.

Now I can't get to them until Monday and I said just leave them until I can get to them. She's insistent that they have to be refrigerated, I said no they don't.

Question do they or do they not have to be refrigerated?

7. Don't worry about the nutrients - Green peppers are pretty much just fiber.

Except for the minerals, basically nutrient free.

3. Not really - esp. when green they are good on the kitchen counter for up to a week.

At the local farmers market they are piled up on counters and often are there for many days. When they go their ripe color (yellow, red, orange or brown), they are much more perishable.


Sorry to differ with your mom!

I've got about 50 bell pepper plants and always have peppers of various ripeness here and there - shelf, fridge, freezer...

keeping peace and throwing them in the fridge.

You got your way with the bushel of peppers, let her have her way with tossing them in the fridge.

Mom made 3 gallons of vegetable soup earlier this week, it's stored in the fridge taking up needed room. She gives the soup(quarts) to my brothers (2 haven't showed yet), 2 neighbors down the hall(1 hasn't shown up yet), she's given it away to a couple of other neighbors. There's also about 4 lbs. of tomatoes in the fridge, a neighbor from downstairs showed up with about 2 quarts of her home made spaghetti, I've got cottage cheese in the vegetable crisper, etc. Mom is in the kitchen right now wrapping tomatoes in newspaper to be stored in the pantry. There's also about 4 quarts of her home made pickles(she wants to pickle some more this week end).

I just don't have the room.

bagging them and leaving them outside if it gets cool at night in you area.

but even though we live on the 4th floor and have a wonderful porch & view, critters still scale the walls.
