(77,271 posts)I caramelize onions. About 2/3rds of the way to medium brown I add sliced mushrooms.
When the mushrooms are sweated, I add a cup of dark red wine & reduce.
Salt to taste, some black pepper, a little allspice, a pinch of cinnamon, a splash of Worcestershire, and a few drops of red wine vinegar.
It becomes a condiment to put on the burger.
Now, if you're providing, I'm going to need brown mustard, sliced tomatoes & iceberg lettuce.
Oh, and the buns need to be slightly toasted.

half=pound burgers...
favorite burger:
8oz angus patty
Swiss or Gruyere cheese
Sauteed mushrooms under the cheese
Raw onion rings on top of the cheese (thank you very much!)
Ketchup & a sharp mustard like Guldens or Colmans.
