Salmon is perfect for roasting because it’s such a forgiving fish. The key is salting the fillet ahead of time, which seasons the flesh all the way through and helps it stay juicy, even if you overcook it a little. In this recipe, adapted from my cookbook “Let’s Party” (Union Square & Co., 2025), the salmon is roasted just until cooked then is immediately doused in a floral, herby and briny mix of fresh orange juice, olive oil, roughly chopped olives and parsley, further ensuring that every bite is moist and flavorful.

All of y’all posting these amazing recipes, especially with fish.
I am an “older” 😉 widowed male with just basic cooking skills, I raised a daughter alone from 10 years old and she now is a 34 year old success. So I nourished her pretty well.
But as soon as I can walk after recovering from Achilles repair, I plan on trying many of these.
Getting tired of power bars and peanut butter being about all I can manage with extremely limited mobility.
And I am building up an appetite reading all the great recipe posts.
Plus, a fantastic break from hell here on earth right now.
Thanks to all, keep em coming, and keep bringing the great music posts from the past.
Sanity nourishment for me. Thank you DU.
