(12,785 posts)It's a fairly tough piece of meat pounded in submission, battered and deep fried in the manner of fried chicken.
It's a good way to use a less desirable piece of meat for those who do hard physical labor.
I suppose you'd be more comfortable with the euphemism country fried steak.
My. German descent great grandmother and grandmother would use the edge of a heavy plate to tenderize and then prepare that beef like Wiener Schnitzel.
There was very little veal available in late 29th early 20th century Texas. People make do with what they have.

(42,507 posts)Never understood why people are so crazy about beef. My dad was that way. Maybe growing up with that, and a refusal to enjoy more adventurous foods, turned me against it. I was living on a shoestring budget in grad school so used to get Wendy's cheapest meal for lunch -- a cheeseburger. Got so sick of the taste of hamburger I haven't wanted to taste it since. Plus I figured out all the real flavor and texture is in the sauces and toppings -- you can use sauces and toppings on anything else, and never miss the 'plastic* meat'.
*Literally plastic, in the original sense of the word: capable of being molded into shape. Added beef fat smooths the texture of ground beef, allowing it to be extruded from nozzles into pre-formed patties which hold their shape better than pure beef when cooked.
