Here's some Cinnamon cookies for you!

Easy Cinnamon Cookies (Soft & Chewy)
By Claire Wells

Servings

48 servings
Prep time 20minutes
Cooking time 10minutes

Soft, chewy, and deliciously spiced, these cinnamon cookies are dangerous.
Trust me, after one bite, you'll want to devour the whole batch!

Ingredients

1 cup sugar (or 1/2 cup each brown and white)

1⁄2 cup butter

1 large egg

1 teaspoon vanilla

1 1⁄2 cups flour

1 1⁄2 teaspoons cinnamon

1 teaspoon baking powder

1⁄4 teaspoon salt

cinnamon sugar

Instructions

Combine the butter and sugar in a stand mixer on medium-high speed until light and fluffy.

Add the egg and vanilla, then mix on medium until blended. Turn the mixer off.

Mix the flour, cinnamon, baking powder, and salt in a separate bowl. Then add it to the mixer.

Start on low, mixing the flour into the butter, until a dough forms.

Cover the bowl and place it in the refrigerator to chill for approximately 2 hours.
The mixture should be firm enough to hold its shape when molded.

Preheat the oven to 350 degrees Fahrenheit (175°C) and line a baking sheet with parchment.

Portion the cookie dough into 3/4-inch balls. Then roll each ball in the cinnamon sugar, coating well.

Place the cookie dough onto the baking sheet, leaving one inch between each cookie.

Bake for approximately 10 minutes, or until the edges start to turn brown.

Remove the tray from the oven, and allow the cookies to cool slightly.
Then, transfer them to a cooling rack to cool them completely.

Cinnamon Cookies
Author: Kim

Delicious Cinnamon Cookies are perfectly crisp on the outside and soft and chewy on the inside with the most incredible cinnamon-sugar flavor. A cross between a sugar cookie and a snickerdoodle, these cookies are perfect for any occasion! Make this easy recipe for the holidays, an after school treat or any time you're craving something sweet!

Ingredients

For rolling cookies

3 tablespoons white granulated sugar
1 tablespoon ground cinnamon

For cookies

1 cup dark brown sugar
½ cup white granulated sugar
1 cup butter, softened
2 large eggs
2 teaspoons vanilla extract
2 ½ cups all-purpose flour
¾ teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
¼ teaspoon salt
Optional for sprinkling on baked cookies: coarse sea salt

Instructions

Combine the 3 tablespoons white sugar and the 1 tablespoon cinnamon in a small bowl and set aside. Add sugars and softened butter to a large mixing bowl and use an electric mixer to beat together on medium speed until combined and creamy, about 2 minutes. Add eggs one at a time, mixing after each addition until just combined. With the last egg, add in vanilla extract and mix until light and fluffy.

Whisk flour, baking soda, baking powder, cinnamon, nutmeg and salt together in a separate bowl. Gradually add flour mixture to sugar mixture, mixing at low speed just long enough to combine. Do NOT over-mix or you could end up with tough cookies. Chill dough for at least 30 minutes and up to 3 to 4 days.

Take the dough out of the refrigerator. Preheat the oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. Roll 1.5 tablespoons (per cookie) dough into balls, then roll each ball into cinnamon-sugar mixture to coat. Place cookies on prepared baking sheets and bake for 12 to 13 minutes.

Allow the cookies to cool for at least 5 minutes on the cookie sheets before transferring to a wire rack. The longer the cookies cool, the chewier they will be.

Notes

Storage. Cookies can be stored in an airtight container, at room temperature, for up to one week.

Freezing Instructions. Cookie dough will freeze well for up to 3 months.

Baked cookies will also freeze well for up to 3 months, thaw to room temperature before serving.

The Best Cinnamon Cookies Recipe
By Chavez Adams

Prep Time :15 minutes
Cook Time :10 minutes
Chill Dough :30 minutes
Total Time :55 minutes
Serves: 21

Ingredients

1 1/2 cup all purpose flour
3/4 tsp baking soda
1/4 tsp salt
1/2 cup butter softened
3/4 cup granulated sugar
1 large egg
1 large egg yolk
1 1/2 tsp cinnamon
2 tsp vanilla extract

Cinnamon Sugar Swirl Mixture

1/4 cup dark brown sugar
1 tbsp cinnamon
2 tbsp butter softened
1 tsp flour
1/2 tbsp molasses

Instructions

Cinnamon Sugar Swirl Mixture. In a medium bowl, mix brown sugar,
cinnamon, butter, and molasses. Add the flour and set aside.

In a medium bowl, sift the all purpose flour, baking soda, and salt. Set aside.

In a large bowl, add the granulated sugar, softened butter, cinnamon, and vanilla, and beat for about 2 minutes until creamed.

Add eggs and egg yolk and beat until well combined.

Add your “sifted flour mixture” into your wet batter and mix with a wooden spoon or rubber spatula until combined. Be sure not to over mix.

Gently add and fold in your cinnamon swirl mixture to the cookie batter, but be sure not to over mix to ensure you have a distinct swirl.

Transfer the cookie dough to a fridge and let chill for at least 30 minutes to allow the flour to hydrate (Pro tip: Allowing your dough to refrigerate for 2 hours will result in the best flavored cookie; however, 30 minutes works just fine.)

Preheat your oven to 350°F. Line a nonstick baking sheet with parchment paper.

Remove your chilled dough from the refrigerator. Use a 2 tablespoon-sized cookie scoop to scoop the dough into the parchment lined baking sheet. The dough should be about 2 -3 inches apart.

Bake the cookies at 350 degrees for about 10 minutes or until the edges of the cookies are set and the center is soft. Let the cookies rest for about 15 minutes or until set. It may be hard to resist the urge to sneak a taste, but it'll be worth it!

Notes

Even if you mix the cinnamon swirl too much into your dough, the cookies will still be delicious!

Sugar-Free Cinnamon Cookies: A Guilt-Free Delight

Baking is a dance between precision and passion, and sometimes, it’s about finding ways to enjoy our favorite treats without compromising our health. While I personally got this sugar-free cinnamon cookie recipe from Ossg Recipes, I am excited to share my experience and insights on how to make the most delicious and guilt-free cookies from it.
Ingredients: The Building Blocks of Flavor

The quality of your ingredients will directly impact the taste of your cookies, so be sure to select the freshest and finest ingredients you can find. Here’s what you’ll need to create a batch of these delightful treats:

2 Large Eggs: Provide structure and richness.
2 Tablespoons Water: Adds moisture and helps bind the ingredients.
5 Teaspoons Granulated Sugar Substitute: The key to keeping these cookies sugar-free.

Choose your preferred brand and adjust to taste.

1 Teaspoon Ground Cinnamon: The star of the show, imparting warmth and spice.
1 1⁄2 Cups All-Purpose Flour: Forms the base of the cookie dough.
1⁄2 Teaspoon Baking Soda: Leavening agent, creating a light and airy texture.
1⁄4 Teaspoon Salt: Enhances the flavors of the other ingredients.

Directions: A Step-by-Step Guide to Baking Bliss

Follow these steps carefully to achieve the perfect balance of flavor and texture.

Whisking the Wet Ingredients: In a medium-sized bowl, beat the eggs and water together until light and fluffy. This step incorporates air, which will contribute to the cookies’ delicate texture.

Adding Sweetness and Spice: Gradually beat in the sugar substitute and ground cinnamon until well combined. Make sure there are no lumps of sugar substitute remaining.

Combining Dry Ingredients: In a separate bowl, combine the flour, baking soda, and salt. Sift the dry ingredients together to ensure even distribution. This will help the cookies bake evenly.

Incorporating Dry into Wet: Gradually add half of the dry ingredients to the egg mixture. Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix, as this can lead to tough cookies.

Repeating the Process: Repeat with the remaining dry ingredients, folding until just combined. The dough should be soft and slightly sticky.

Preparing for Baking: Preheat your oven to 375 degrees F (190 degrees C). Grease your cookie sheets lightly or line them with parchment paper.

Dropping and Baking: Drop the cookie dough by teaspoonfuls onto the prepared cookie sheets, spacing them 2 to 3 inches apart.

Baking Time: Bake for 10 to 12 minutes, or until the edges are lightly golden brown.

Cooling: Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Tips & Tricks

Choosing Your Sugar Substitute: Different sugar substitutes have different levels of sweetness and can affect the texture of the cookies. Erythritol, stevia, and monk fruit are popular choices. Start with the recommended amount and adjust to your preference. Be mindful that some sugar substitutes have a cooling effect, so experiment to find what you enjoy.
Achieving the Right Texture: The key to soft and chewy cookies is to avoid overbaking. Keep a close eye on the cookies and remove them from the oven when the edges are lightly golden and the centers are still slightly soft. They will continue to firm up as they cool.
Flavor Variations: Feel free to experiment with different flavors. Add a dash of vanilla extract, a pinch of nutmeg, or some chopped nuts for added texture and flavor.
Cookie Sheet Prep: Ensure your cookies don’t stick by properly preparing your cookie sheets. You can use parchment paper, silicone baking mats, or simply grease the sheets well.
Storage: Store the cookies in an airtight container at room temperature for up to a week. To keep them fresh for longer, you can freeze them for up to two months.
Measuring Flour: To ensure accurate measurements, spoon the flour into your measuring cup and level it off with a knife. Avoid scooping the flour directly from the bag, as this can compress it and result in too much flour in your recipe.
Adjusting Baking Time: Ovens vary, so baking times might need slight adjustments. Always keep a close eye on your cookies during baking and adjust the time as needed to achieve that perfect golden-brown color.
Preventing Flat Cookies: To avoid flat cookies, ensure that your butter is not too soft and your baking powder is fresh. Chilling the dough for 30 minutes before baking can also help the cookies hold their shape better.

18. Love The Smell & Taste Of Cinnamon, Too

I use cinnamon even in savory cooking.
Early in my career we were trying to determine the porosity of polymers to be used as a fragrance release.
One of the organics we played with was cinnamaldehyde, which is the primary olfactory component in cinnamon.
I had a vial of it, and every month I'd put a couple drops on the floor mats of my car.
For about 2 years, my car smelled like cinnamon. I loved it.
