I''ve made gumbo, other soup, and fried okra and what I learned from one of the gumbo recipes (it may have been Emeril Lagasse's show) is that okra will produce "slime", keep stirring and cooking, and the "slime" cooks away. It takes a little time, but the resulting gumbo is delicious.

My small town church would have ‘dinners’ once a month in the basement and part of the ‘settings’ on the rows of tables was a small plate with a square of red jello with some fruit cocktail in it. Boy, did we know ‘fine dining!’

Try cutting the cauliflower into florets, tossing with olive oil, ground cumin, smoked paprika, salt & pepper. Not a lot, just enough to season it all. Then 15 minutes in a hot wind cooker at 400º. Comes out tender with a crisp golden exterior.

Other seasonings are good too, that's just my favorite way to make it.

As a kid I learned to cut it in tiny pieces and swallow whole (like a pill) and then wash it down with a gulp of milk. I was very careful not to let any part of the food touch my tongue. I literally put the tiny bits in the back of my throat. Mom didn't care as long as it disappeared off my plate, was not hidden in my napkin or fed to the dog.

I accidentally ate some thinking it was a different quiche (we had leftover of two kinds) and it was so repulsive I got the dry heaves. I know I have an intolerance but I don't know how people eat it.

It’s actually preserved cod soaked in lye, rehydrated and cooked. Has the consistency of gelatin.

I tried a bit of it, it was kind of like an overly salty whitefish, but not too bad.

I think we decided it must have been fake lutefisk, it was too good!

I love cauliflower raw or cooked . I don't know what they did with to make that crust. It was a two pack of frozen. Ate a couple bites and tossed the rest. Went to the freezer to get the other one and disposed of it also.

When I was a kid, I loved liver & onions.
My parents would take us out to eat and when the waitress asked me what I wanted, I'd order liver on onions with a slice of lemon.
The waitress would look at my parents thinking maybe they were making me get that.
My parents would say "He really does want that. He loves it."
And, it's your #1 as worst ever.
I lost my taste for it when I learned what the liver does!

My Mom was a terrible cook too, with everything cooked to mush or half burnt. My folks were originally from South Carolina. She did make good fried chicken in a deep fryer.

I learned how to cook after I left home. I don't eat much beef any more, but I love liver and onions that's cooked just till its tender, and not red. And not breaded! Same for chicken livers. Fresh okra is wonderful when its just lightly sauteed in real butter, and still a little bit crunchy. Again, not breaded, not slimey at all. I also put it in blackeyed peas. Yellow squash is excellent fried with onions, or made into squash fritters lightly browned. Salmon is only good if you remove the skin after cooking (cats love it!). Too fishy otherwise. Excellent baked, broiled, or sauteed with onions, peppers, and lemon juice. I also love grits, buttered, with lots of pepper, a side of sausage patties, and fresh, sliced tomatoes.

I guess this makes me sound like a mostly southern cook. At least I don't cook everything in lard!

Nasty stuff that won't get past my lips: My mom used to boil turnips and collard greens, and put vinegar on the greens. Holy crap it was awful! Catfish--even the smell makes me want to barf. I also can't drink black coffee either. I love the stuff when its heavily doctored.

Dinner tonight: Baked ham, egg noodles with broccoli, onions, and sharp Cheddar. Dessert is a pear cobbler--of course, with coffee!

It was a Jamaican restaurant. The goat curry was highly regarded by the reviewer, so I thought I'd try it.

114. Uni - a type of sushi. Specifically the gonads of sea urchins.
Thu Jan 22, 2026, 09:33 PM
Jan 22

I was stationed in Japan for 2 years. It took me a little while to get brave enough to try 🍱 sushi. Once I did, I was immediately hooked, except for uni.

I had it only once. It felt furry/fuzzy in my mouth, and tasted really vile. The descriptions of it sound great - “a rich, custard-like and buttery texture, with a flavor that is often described as sweet, savory, and distinctly ocean-like.” Not so the stuff I had. It was so terrible that I have always wondered if the uni I was served was going bad. I’ve never been curious or courageous enough to try again.

Liver, with or without onions, seems to most of us, to be the culinary equivalent of the universally despised Kars For Kids ad.

It’s soybeans that have been fermented formed into a whitish bean filled block that is sliced up and served. The host of this gathering friends of the family was really proud to have made this as it’s complicated to make. I don’t remember its official name but it was so awful My body literally was unable to swallow it. I would try but my swallow reflex did not work. I excused myself to the bathroom and spit it out in the toilet Rinsed out my mouth over and over. It was truly disgusting I’m lucky I didn’t barf in front of everybody.
