I've been a fan of Walker's since first visiting Edinburgh for a several days in 1974.

Also, fortunately or unfortunately, I live way too near (0.7 miles) from a Crumbl Cookies franchise. They have lots of very yummy flavors that I partake of far too often.

I am partial to those chocolate-topped butter biscuits made by Bahlsen, LU, and whatever Canadian and U.S. companies make them.

However, I've also been on a cookie-baking revival for a few months here and have experimented with gluten-free drop and cut-out cookie recipes. I also have an old family recipe for Linzer cookies (butter, ground almonds, lemon juice, etc.) that I sometimes use.

It's so bad people don't invite me to weddings because I can't leave the cookie table. Does Twix count? It's "the candy with the cookie crunch".

So many to choose from. Coconut Bars are good, but I dig Windmills too. Lemon Oreos (but no dipping, that ruins the moo) are stellar for sweetness, and good old Choco Chip anytime. Right now the jar is stocked with Keebler Fudge Stripes.

Anything except an Eat n Park Smiley cookie.

We have an E & P right down the road. It's my favorite for the salad bar. I can add that as a side, but it's so good I just take the main course home.

My Aunt Rose always spoke of these "You-uns. haha

Just combine the recipes for a pan cookie and mint marble brownies:

1. Bake a chocolate chip pan cookie
2. Place peppermint patties on top of the cookie
3. Place cookie tray/pan back in oven to melt/soften the patties
4. Spread the softened patties evenly over the pan cookie (instant marble effect)
5. Cool (if you can wait that long) & slice

With lots and lots of chips! Next Raspberry Cloud Cookies and Chocolate Oreo's. The Oreo's I make Double Stuff by separating the cookies and tossing the side without any chocolate cream.

Do I really have to pick one type of cookie?! Oatmeal chocolate chip with enough butter to frighten your cardiologist, peanut butter with the recipe amount of peanut butter doubled, shortbread, thin mints (just take my money, Girl Scouts,) molasses (the Archway brand are very good for store-bought,) anything lemon-based, white chocolate macadamia (keep those specific nuts away from dogs) ...

Cheesecake Cookies

Yup! You heardme right, cheesecake cookies. I will not
rest until Ihave a cookie for every type of cake.


INGREDIENTS

1/2 cup (1 stick) unsalted butter
1/2 cup light brown sugar, firmly packed
1 extra large egg, separated
1 1/4 cups graham cracker crumbs
1 cup all-purpose flour
1 1/2% teaspoons baking powder
1/2 teaspoon kosher salt, divided(1/4 tsp & 1/4 tsp)
3 ounces cream cheese
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
2 teaspoons lemon zest


PREP: 15 Minutes
BAKE: 12 Minutes
‘YIELD: 12 Cookies

Preheat the oven to 350" F. Line a large baking sheet with
parchment paper. Place one oven rackin the center ofthe oven.
In the bowl of an electric mixer fitted with a paddle
attachment, cream the butter and the brown sugar for three
minutes, add the egg white, and mix for one minute on low.
Scrape down the sides of the bowl well.

Whisk together the graham cracker crumbs, flour, baking
powder, and quarter teaspoon salt. With the mixer on low,
add the crumb flour mixture to the creamed butter and mix
just until combined.

In a medium size bowl, mix together the cream cheese,
sugar, egg yolk, vanilla, lemon zest, and % teaspoon salt,
until smooth and creamy.

Using a scant two tablespoons per cookie, scoop up and
make well rounded, clean edge mounds and place them
on the parchment lined tray. Using the bottom of a 2inch
glass, dipped in ice water, slightly flatten the cookies, Using
a one teaspoon measuring spoon, dipped in ice water, make
a well in the center of each cookie. Divide the cream cheese
mixture between the cookies.

Bake for twelve minutes, rotating the pan half way through.
Cookies should stay a light golden brown. Remove the
sheets to a wire cooling rack and cool for ten minutes, then
remove the cookies to racks to cool completely.
Store these cookies tightly covered in the refrigerator.

NOTE:

One of these is enough for dessert! The batch is small but
doubles well.

They are called Girl Scout Lemon-Ups Snappers.

Crunchy shortbread bits with a lemon truffles center.
Label says they're made Edward Marc Sweet Shop.

I bought them on a whim and now I can't find a store that sells them - so I can buy more.

And I like the cookie whose recipe is on the back of the Jiffy baking mix box.

I also like the Lemon cookies my Aunt used to make when she was alive. They were made using baking ammonium. No one else in my family has the recipe so I'll never have those cookies again.

I sent them with my husband to a VFW meeting and the cookie bin came back empty. He said everyone loved them.
My favorites change because I love them all--including oatmeal raisin.

homebaked chocolate chip (made with brownd butter) ginger snaps and the best of all little Italian sesame cookies for dunking! Always have them on hand. I bake half a batch and then freeze the rest of the dough already shaped then quickly bake prior to when company comes over.
Never met a cookie. I didn’t love.!

I saw that Walkers brand was mentioned above, but homemade is the cookie king. My late wife was a champion shortbread maker, winning first place at every Highland Games we ever went to. Butter, sugar, flour - handle it the least you can. Even I make some good stuff.

At the grocery I buy the Walkers for a treat with my lunch because, hey, it's shortbread!
