(4,209 posts)We have a lovely little sandwich maker that works with almost any cheese. My favorite (when I can afford the splurge) is St. Angel triple cream brie and a lovely fig goat cheese with a bit of fig jam to enhance the fig taste on whole grain bread. mmmmmmm.....😋😋😋

(3,323 posts)And Guyere. Dipped in my " feel good" soup. 1 can each tomato and veg beef, half can milk or cream, and a few squirts of worsteshire. It's just a warm, creamy, and slightly tangy addition to the cheese.
Dang debm, now I gotta run to the store!!!!

RICOTTA TRY THIS
This sandwich tastes almost like a pie or tart, with creamy ricotta and sweet
bursting blueberries. Any excuse to have a dessert for breakfast is a good idea
in my book!
SERVES 1
PREP TIME 15 mins
COOK TIME 810 mins
INGREDIENTS
40 g/1½ oz blueberries
1 tablespoon honey, plus extra to serve
3 tablespoons ricotta
Drop of vanilla extract
Finely grated zest of ½ lemon
½ tablespoon butter
2 slices brioche
Sprig of thyme, leaves stripped
1 Preheat the oven to 200°C/Gas Mark 6 (400 F). Put the blueberries on a baking tray, drizzle with the honey and roast
for 710 minutes until just bursting.
2 In a bowl, mix the ricotta, vanilla and lemon zest together, trying not to over-mix and loosen the mixture too
much.
3 Spread the butter sparsely onto both slices of brioche and turn them over. Spread the ricotta mixture evenly
over one slice, scatter over the roasted blueberries and the thyme leaves and place the other slice of brioche
on top, butter side up.
4 Place a frying pan over a low heat, add the sandwich and cook gently for 45 minutes each side until golden
brown. Serve drizzled with extra honey.

(694 posts)Had some mozzarella left over from a previous meal so I figured, what the heck, it's cheese and I love grilled cheese sandwiches. Really liked it. A bit messy but who doesn't love a bit of mozzarella mess?

(76,735 posts)I made them Tuesday, with a tomato/basil bisque.
Cheddar, Swiss, Mozzarella, and Gouda were the cheeses.
Plus, I added 2 very thin slices of tomato on the sandwiches prior to grilling.
Used 5 whole grain bread.
Then, I put them on a 180° oven for 10-15 minutes to get the cheese really melty.
