I made vegetarian Reuben sandwiches for dinner.

Grilled rye bread with Swiss and well-drained sauerkraut, served with homemade Russian dressing. First time I made them. They came out great.

I've done that. If the rye isn't seeded I always add caraway to the sauerkraut. HopeHoops Nov 2012 #7

And one of my favorite sandwiches ever is the Muffuletta. I still want to make a vegetarian version of it. I've got all the Greek olives I'd need

... that I went to. I expected to really MISS the turkey, but this group of friends
consisted of some serious vegetarian (except for me) foodies.
.
It was AMAZING!!! I didn't even THINK about turkey during that meal. If I could
afford to pay someone to cook like that for me alla time, I would gladly -- even
eagerly -- become a vegetarian.

But a Reuben without corned beef (or at LEAST pastrami) just makes me sad.
.
Really, really sad.

BTW, even though it's canned, Libby's markets an incredible sauerkraut flavored
with caraway seeds. Now, other sauerkrauts pale in comparison.
