It's cold, the roads are icky. I have sweet potatoes, half and half and milk, butter, vegetable broth, the customary spices.
Any suggestions?

(53,866 posts)then add chunks of sweet potato and stock and some spices (nutmeg, cinnamon, salt, pepper, rosemary) and let it simmer for a while.
then add some half and half and puree the whole thing (take out cinnamon if you are using whole cinnamon)

(3,682 posts)My preferred way to make it is similar to yours, but with a few variations. I also like to add red bell peppers in with the onions, and mushrooms (I usually kind of mash it in the pot to "puree" the soup, rather than putting it in a blender, and I add the mushrooms after that). I don't usually add cinnamon, but I add cloves and cumin instead to make it a little more savory sweet. Then, right before serving, I like to squeeze some fresh lime juice into it to really make all the flavors pop.
This also works really well with good winter squashes like butternut or pumpkin.

(12,272 posts)Half a squash peeled and half of a large sweet potato peeled, half of a yellow onion, a few stalks of celery, two cloves of garlic, chop them and saute all in two TBS butter. Then add the vegetable broth and bring up to a boil, then simmer for about forty minutes. I added curry spice, a bit of thyme, salt and pepper.
I used my immersion blender and didn't add any dairy, I think the curry is a good choice for spice, this is a sweet soup, but the thyme helped to add a savory note.

I'm also down to frozen onion (duh. I was at the grocery monday)
I'm thinking about adding lentils, maybe an apple and going vegetarian mulligatawny.

This is just one hell of a good bowl of soup! REALLY!
1 large sweet potato peeled and cut in ¾ chunks (I find peeling sweet potatoes easier if cut in slices and par-boiled for 3 min.
1 medium sweet onion (as in valdalia or walla walla) chopped
3 c water
1 jalapeno diced fine
¼ sweet red pepper diced
½ pt heavy cream
¼ c peanut butter
2 tbs c smashed peanuts
1 t Cardomom seeds, crushed
½ t garam masla
Salt to taste
Optional: ½ leaves of one green onion, diced or julienned
Bring water to boil add sweet potato and onion, cook until soft 8-10 min.
Remove from heat, and puree with hand blender or kitchen blender-- remember to vent when you blend hot liquids in a closed container.
Return to low to moderate heat--dont boil anymore--add cream and remaining ingredients.
Simmer for 10-15 minutes stirring occasionally, if too thick, thin with water.
Garnish with fresh Cilantro

(13,421 posts)I love curry and make curried carrot soup with exactly the stuff you mentioned in your OP. Sweet Potato would work great in that same recipe. I know frozen onion isn't maybe your first choice, but it should do just fine for flavor in a pureed soup.
I do puree my soup before I add any dairy. However, if you want to bump your protein component maybe greek yogurt would be a nice topper/stir in to the soup minus any other added dairy. If your curry is good and strong it could be quite nice!
Sounds yummy on a cold damp night!
