I just made a terrific Reuben sandwich. Pumpernickel rye, corned beef, Swiss cheese, sauerkraut...grilled on a skillet with butter. Yumm

Makes one sandwich
4-6 thin slices white sharp cheddar cheese
Tomato, thinly sliced
Cucumber, thinly sliced
Vidalia or red onion, thinly sliced
2 tablespoons crunchy peanut butter
2 slices whole grain bread
Layer the ingredients in the order given; eat with the cheese layer on top.

Can only be improved by a slice of Swiss and toasted, but that part is optional.
It is however recommended not to breath on anyone in the near future.

(8,361 posts)I took my mom, wife, and daughter to Miami in 2006 and we stayed in a hotel in Miami Beach (Art Deco district). Anyway, we drove around the area and ended up over in Key Biscayne. While there, we stopped in a Cuban grocery/deli/restaurant and had the most wonderful Cuban sandwiches ever.

(8,361 posts)Portland State University, and there is a restaurant in Beaverton that has very inexpensive bahn mi of all varieties. I love the ones with sweet and tangy notes along with spicey peppers.

(46,179 posts)A good Reuben is one of my top 2 or 3 sandwiches of all time anyway, and you remembered to use good pumpernickle rye, and not that faux rye served in many restaurants.
Another favorite, for another time: An avocado sandwich. Rich whole-grain bread, thick with avocado, add sliced red onion, tomato, and butter lettuce. A little salt and pepper. If you need a dressing, use a plain yogurt...I can't tolerate mayonnaise, ever.
Another: The BT. Leave off the L. Again, a rich, whole-grain bread, some yogurt dressing, soft bacon, and lots of slices of fresh tomato.

(12,132 posts)Rueben, Italian sub and the Spanglish sandwich (the one Adam Sandler makes in the movie Spanglish - you may not like anything else he's ever done but he pantomimed being a chef so well that I had to go make that sandwich for myself and it is worth every hoop through which you have to jump to make it) (I like to make mine with the 2 middle slices from a round sourdough loaf so it's bigger)(I'd be willing to try a version substituting corned beef hash for the bacon and with rye bread)
World's Greatest Sandwich

3-4 slices of bacon
2 slices of Monterey Jack cheese
2 slices of toasted rustic country loaf (pain de campagne)
1 tbsp of mayo
4 tomato slices
2 leaves of butter lettuce (yes, its called butter lettuce)
1 teaspoon butter
1 egg
Preparation:
1. Cook the bacon until crisp, drain on paper towels
2. Place slices of cheese on one side of toasted bread. Place in toaster oven or under broiler to melt.
3. Spread mayo on other slice of bread top with bacon, sliced tomato, and lettuce
4. On non-stick skillet, melt butter over medium heat. Fry egg, turning over briefly when the bottom is set (keep yolk runny)
5. Slide finished egg on top of lettuce, top with other slice of bread (cheese-side down genius)
6. Place sandwich on plate and slice in half, letting yolk run down sandwich

(4,465 posts)I hadn't made one in so long, I don't know what made me make it. SO fattening and bad for me and I usually end up eating two sometimes three at a time. I'd actually forgotten how to make them but after the first few times I remembered the toasting bit. Yeah, it definitely makes a difference.

(14,881 posts)tomato slices, bits of onion, mixed mild and spicy microgreens from my garden, a dollop of one kind of dressing or another, wrapped up in a Cesar tomato wrap.
Also chicken-caesar with micro-greens, a little tomato and onion, and small chunks of chicken that had been marinated in rich italian salad dressing before roasting, and a little caesar salad dressing, stuffed into a whole wheat/oat/flax pita.

turn over when nicely toasted, brown the turkey side
