There was a restaurant chain in Austin called Mangia's that used sirloin tips in their lasagna. Unfortunately, the owners of the restaurant divorced and the chain filed for bankruptcy. It was such a shame because they were a successful restaurant and I haven't found anywhere else with lasagna that is comparable.

freshly made green pasta (eggs, flour, spinach, pinch of salt), rolled to thin layers then parboiled in water
ragu alla bolognese (not the canned crap)
bechamelle sauce (made fresh: butter, milk and flour)
grated parmigiano reggiano...
yum!
to this day, I associate the smell of the lasagne in the oven with my grandmother.
