and turn the temperature down to 325. At least the turkey will be moist if you leave it in the oven a little too long. Nothing worse than a dry turkey.

Helps to flip it breast up for the last thirty minutes or so uncovered, so skin gets crispy.

Cover the wings with foil so they don't burn.
