My Mom's been gone these last ten+ years but this holiday I always remember her green bean casserole. It looked kinda like this...

(60,013 posts)My daughter loves it. My wife hates it because it reminds her of some unpleasant Thanksgiving meals during her childhood.
Just a side dish - so many emotions!
But only with real onion rings. Not those dried things so many misguided people use.

And it has to be french cut green beans.

Real batter coated onion rings. (The frozen ones you get at the market are fine.)
And Campbells Condensed Cream of Mushroom Soup.
And it's even better a day later as leftovers. I think it's because the flavors mix.

(41,956 posts)Coat with olive oil, kosher salt and cracked pepper, chopped garlic and thyme. RoDt at 375 till beginning to brown and add lemon zest before serving. Easy and tasty!

(16,926 posts)Fresh from the produce bin. Boil or steam until al dente. Saute bacon and onion pieces in a deep dish skillet, stir in beans, add some fresh ground pepper and simmer a few minutes. Enjoy.

I also love its more elegant look-alike cousin: The same thing but with canned asparagus instead of green beans and cheddar cheese instead of the Durkee French-fried Onions.

(46,179 posts)she's hosting us this year. As always, we divide things up so she won't have too much work to do, with everybody bringing something, and she's just working on the main course/protein. She asked what side dishes she should ask for to go with her main course.
I said, "How about a green bean casserole?" I've never actually eaten any; it doesn't sound good to me. I've heard people talking about them for years, though, like they're some kind of holiday prize I've missed out on, so I made the suggestion.
Her response? "Why can't we just have plain green beans? Some fresh, steamed green beans would be good."
That's exactly what I was thinking when I made the suggestion: "I'd love some green beans, but someone will probably think they should be put into some kind of casserole."
I like them steamed until tender but still crisp, unseasoned. Or lightly salted, or drizzled with a bit of malt vinegar. So that's what we'll be doing.

I once broke up with a girlfriend because she had the audacity to make it (well, a fancier one with other things in it) the centerpiece-entree of her vegetarian Thanksgiving dinner.
It's because of green bean casserole that I went 10 years believing I hated green beans.

(6,787 posts)But it's a bit more trouble. Do things separately...Brown the onion rings, sautee the mushrooms. Boil the green beans at the last minute, for, maybe 4 minutes tops, and stir them into the pre-made other bits. Yum. My mouth is watering.

The key is to use fresh ingredients and make everything from scratch. This is how my grandmother did it and it was awesome. My mom made it from the recipe on the Campbells soup can just like everyone else who had lime green appliances and it wasn't fit for human consumption. Looked exactly like your picture.
