Today was my first effort in making a breakfast quiche. A coworker had brought one in not too long ago and I thought that it would be great to make it and bring slices to work for lunch.
The first mistake I made was buying a 1 pound sausage roll (the recipe calls for 1/2 pound) so I doubled the recipe figuring I could make 2 quiches.
The second mistake I made was chopping up too many veggies (I love veggies).
Anyway, browned the sausage, added the swiss cheese (could have cut back a little on the cheese but I generally stick to the recipe the first time).
I ended up with enough makings for 3 quiche, however, I only had two crusted tins.
Final product - 2 complete quiches and 1 jumbo giant omelet.
Now that I have made it I know how I will cut back on the recipe to attain a more reasonable outcome.
As I will probably be eating this all week long I imagine it will be a while before my next effort.

(3,865 posts)I'll try putting one in the freezer. I thought - that is a lot of quiche for one person to eat.
