I'm alone and zapped a Stouffer's lasagna in the microwave. I'm working a black forest cheesecake with cherry glaze for dessert.

Not counting the chunked up bits of turkey I divided into two packets for future turkey casseroles. In the freezer: one container of dressing, two containers with the vegetables and broth to make more dressing, and three packs of turkey meat with two servings each. Plus a good quart of turkey broth in the refrigerator chilling off so I can skim the fat off tomorrow and put into containers to freeze.

That doesn't count what's left in the refrigerator to eat tomorrow - more turkey, dressing, gravy, green beans and sweet potatoes! We'll have beans and sweet potatoes left over to eat with some other main dish - maybe I'll thaw out the pork chops and cook them for Saturday or Sunday.

I cooked a 14 pound turkey for the two of us and we'll get to enjoy it periodically for a few months!

For the second time in 54 years I made Thanksgiving dinner. This is the first time I did a turkey. There's just two of us but (naturally) I went overboard. I got everything left over put in refrigerator-friendly containers and deconstructed the bird - which was one of those mostly breast deals with the skin and backbone but no legs or wings. I even boiled down the carcass for stock that I will probably never use. All that's out is a pile of pans and dishes in the sink and I ain't tackling that until tomorrow.

Whew!
