But in two of those pictures the eggs have been molested. Why oh why would you destroy those yolks full of dipping sauce???

There is a restaurant in Las Vegas called Ellis Island where we stopped first on all our visits for breakfast. We always wound up splitting it. (http://ellisislandcasino.com/dining/cafe/)

Ellis Island was one of my favorite hang outs. It was mostly a joint for locals. Good, cheap food. Small gaming area. A block off the strip right behind Bally's. Loose video poker machines that would let you play a $20 for a lot longer than the strip hotels.
Good memories.

Mom and I lived with her parents for a few years following her divorce.
Granpaw would usually make Sunday breakfast.

Patty sausage and basted fried eggs.
AKA "sop eggs".
Buttered toast to sop up the egg yolks.

First he'd make the sausage patties and fry them up in granny's cast iron skillet.
Then, one at a time, he'd crack the eggs into the sausage grease.
After the whites had 'set', he'd use a spoon and baste the yolk until it was translucent yellow.

Oh Boy!
Some more GOOD!
Little flakes of pork goodness on the eggs.
That's still the way I make 'em today.
