2. Cauliflower

Cut a small head of cauliflower into florets, and coarsely dice a bell pepper. Precook both in the microwave until about half-cooked. (Exact time will vary with the freshness of the cauliflower. 2-4 min and use your nose.) In a heated wok or large frypan, put a little olive oil, grated clove of garlic, and 1/2 to 1 tsp of crushed red pepper, according to taste. Add the pepper and cauliflower and saute about 15 min, tossing or stirring from time to time. Put in a serving dish and top with grated pecorino della pecora della montana -- Locatelli, that is.

Clean Brussel sprouts.

Put in sauce pan with 1/8 cup water, drizzle of good olive oil, and pesto or chopped fresh garlic.

Cook very slowly under low heat stirring occasionally to coat all sprouts with olive oil and pesto.

When Brussel sprout are cooked (takes about 15 minutes) , added grated parmesan generously.
