But it's a PITA to clean and the cookie dough is hard to get just right. My preferred cookie methods are 1) scoop the dough out with a small ice cream type scoop or 2) roll the dough up into a log, chill, then slice. With the second method I can roll the log in demara sugar and get really nice crunchy edges.

because you can also divide the dough to flavor or color parts of it, and then roll/shape those together for your cookies. That's how you can do checkerboard, and other patterns

If have any restaurant supply stores around, get the scoops that are measured. They work great for making different yet equally-sized cookies.

They don't work in my cookie scoops at all!

I have three different size scoops - standard ice cream scoop size, perfect for measuring muffin batter into regular muffin tins; medium for good size cookies and measuring mini-muffins; and small for "tea cookies."

Those last are the pecan cookies from a recipe I found in a 200 hundred year old notebook. They also work great rolled into logs and then rolled in sugar - but since they are kind of rich, the small cookies work better. I could roll the scooped dough in sugar - I might try that the next time I bake those!

Try sanding sugar, too. Bigger grains, so there might be more of the sugar crystal left after baking.

The last cookies I made were oatmeal, and I used my semi-large cookie scoop for them. The recipe came from the Cooks' Illustrated Baking Book. Yet again, the recipe turned out perfectly on the first try

The demerara sugar (I spelled it wrong before) I get is big crystals but only partly refined so it's like brown sugar flavor. It leaves a lacy crunchy edge that is wonderful.

For my oatmeal cookies I use a classic Pecan Crispies recipe. Lots and lots of oatmeal, and only enough flour and egg to hold it together.

Now I want oatmeal cookies - and since this week we have cool mornings, I'm spending them weed whacking around the house. My arms are too tired to make cookies after that. Oh well, I don't *need* cookies.

If you'd like the oatmeal cookies recipe I could transcribe it here. (Sorry I haven't answered before now; took some antihistamines yesterday and spent the day unconscious.)

I spent yesterday recovering from my spider attack. I've even named the dead spider - he's Franco. And he's still dead.

I'll start transcribing the recipe then. They have some good variations, and I did one the last time I made it: roasted almonds and orange zest in place of the raisins

I'm working with one and an half eyes right now. Got shampoo in one in a major way this morning (making the mistake of cleaning the soap dish for my bar-shampoo and bits got in one eye) so I've been avoiding writing anything, including transcribing that recipe for you. I'll probably get to it tomorrow when I'm more healed.

Take care of that eye. If you have some artificial tears, flush it good.

No hurry on the recipe. It's too hot here to bake.

now it's just a major annoyance. I took a nap for a few hours and that helped because I wasn't able to be annoyed by the irritation and then rub it more.

I have some solution for it as well as a damp clothe I put in the freezer from time to time to help numb things. It feels a little better, but it is swollen/puffy.
