The engineer's theory is the the master was recorded a few RPM below 78 so the the playback would be more "energetic".
So he slowed down the playback speed to lower the key from B flat to a natural A. He then digitally cleaned as much pop and hiss as he could - et voila

Though honestly Zeppelin's is so completely different, with just a few of the lyrics copped, that I wouldn't really call it a cover. I think by the time they released it (in the 1980's) they were tired of lawsuits so just decided to give RJ credit even though it's a very different song.
