Junko Yamamoto's cover of "500 Miles" is the most soulful version I can think of
Still a popular pick among, ahem, older folks, in any karaoke session today. PS. if you're going to Japan LEARN THIS SONG - everybody knows it and if you can sing it you will score super cool Gaikokujin points.
Also recommended, Sinatra's New York, New York, and Johnny Cash's Ring of Fire.
If you can pull these songs off - in key, you will be the hit of every occasion and often eat and drink for free.
If you're learning Japanese, you'll definitely need to practice pronunciation (and phrase rhythm) and singing is probably the best way to learn how words should be accented and how the syllables can be sped up or stretched out.
Skills that will reduce your accent, in other words. Just mastering one simple song will make you more comfortable forming the sounds and piecing 'em together in a way that becomes muscle memory.
I recommmend -" Ichiiban Boshi"
