An eggplant blossom ... one of many in my garden this morning

They’re kind of squash-like blossoms.

11. I made eggplant parmesan for the first time yesterday.

It was pretty good! The eggplant was fresh from the garden. There are a few more just about ready to be picked.

I find that many veggie plants do produce some interesting blossoms. The color of these really caught my eye.
