My android phone regularly wants to update many apps

Gmail
Google Chrome
Google Maps
Google+ for G Suite
Google Street View
Google
Google Play Books

Why do these apps need to update so often?

Youtube wants access to my contacts, microphone, location

Why can't I remove Youtube from the phone?

Besides getting bug fixes and enhancements, there is also updates for the new versions of Android.
