What's for Dinner, Mon., Jan. 25, 2021

The RG made mile-high sandwiches with all kinds of delicious ingredients: ham, Brie, lettuce, tomato, sprouts, onion. On Brioche roll with sesame seeds.

Tomato-bean soup.

I made a new type of salad dressing. It's called "Nuts about this Dressing" and it is almond butter, dates, garlic, olive oil, and maybe a few other things I'm forgetting all whirled together with the immersion blender. Goes over tossed salad with raw veggie.

For dessert, I made a pan of fresh brownies this morning. Have walnuts in them. Swiss almond vanilla ice cream over the top.

Miso soup with tofu and Kim Chi and veggies in the broth.
Veggie egg rolls.

So, when he goes to food banks, he gives me all the meat. so I do some yard work for him, Much of it appears to be institutional products. I have a five pound bag of chicken fajita meat. It is only lightly seasoned, and already cooked, so I do lots of different things with it. Tonight I have marinated some in teriyaki sauce and we will give it a quick stir fry in the wok and put it over rice.

7. Skillet lasagna

It’s been awhile since I’ve made skillet lasagna. I really have to do it again soon because it’s a tasty meatless one-pan dinner. I was going to make salad on the side, but just cut up a few vegetables.

In tomato sauce with peppers onions and mushrooms. Parmesan and mozzerella pearls

And crumbled bacon.
