Just...DON'T!
Mix t. thought she'd try gumbo in her instant pot.
(She is 100% Cajun on both sides. Mom and pop.)
Actually took longer than her standard recipe.
The sauté' function made an inferior roux.
It was just blah.
She rescued it tonight.
Made a brunette roux and added that plus some more okra and file'.
NOW it tastes like her gumbo.

I don't have a problem with it as I like the taste and how it thickens the the stew.. ymmv
