Hamburgers with red onion, lettuce, tomato, avocado. The RG tried a new thing with cooking the burgers. He was going through old files and found a note to himself to add heavy cream to the ground beef, so he tried that tip today. It holds the burger together better.
In addition, we had thinly sliced potatoes. Also potato chips (barbecue kettle chips).
Tossed green salads with raw veggies like carrots, pepper, tomato, and I added some microgreens on top (wasabi mustard and beet sprouts).
Cherry Pepsi for me, wine for the RG.
Dessert is an apple tart with vanilla ice cream. Hot pomegranate cranberry tea.

(1,089 posts)A quarantine specialty he has learned to make when Giant stopped stocking most frozen pizza. With tomatoes, spinach, onions, Don Pepino pizza sauce (a New Jersey company). Tomato, basil and Mozzarella salad.

(9,940 posts)So meatless. Brown rice spaghetti (Tinkyada is the ONLY brand!) with cherry tomatoes, bay scallops, and basil. Olive oil base, of course. Seltzer for me with a slice of lemon, tea for SU.
Re burgers--we're both lactose intolerant to a greater or lesser degree, but I learned that chopping a couple-three fresh mushrooms and incorporating them into any kind of ground burger mix makes burgers juicier and hold together well. I first tried it with bison burgers which tend to be dry, but have since done it with beef and lamb. If you chop the mushrooms really fine you don't notice their presence or taste.

(21,988 posts)I'm going to try that but I'm worried about the added fat. I guess if you don't have any cheese on top it kinda equals out. (Rationalization!)
We're still in the Outer Banks of North Carolina. Here's our menu for tonight.
Appetizer
A dozen local raw oysters on the half shell with horseradish, cocktail sauce and lemon.
Entree
Chicken breast cutlets dipped in whipped egg then coated with Panko bread crumbs and pan fried.
Salad
Romaine lettuce, fresh baby spinach, red onion, sliced carrots, quarter rounds of cucumber with the Landlady(!)'s special honey mustard dressing topped with a sprinkle of pine nuts.
Dessert
Slices of fresh fruit with some red wine on the side.
