romaine lettuce
red peppers
yellow peppers
cucumbers
homemade pickles
pickled tomatoes
fresh tomatoes
pickled cherry peppers
stuffed green olives
green olives with pits
feta cheese
goat cheese
chick peas
8 packs of mushrooms (they went on sale, 49 cents/8 oz pack!)
sardines
boiled eggs

I don't know what my problem is, it's like I've gone into salad hoarding mode and need an intervention. But anyway, I guess we are having salad.

Fresh veggies aren't sitting too well with me right now, so I am juicing mine, but salad sounds really gooood!

The sole is pre-made, store bought. A local company markets them. They are really good. A little pricey, but I get a package of two for a dinner treat. Bake one on buying, freeze the other for later. This is the later...

live in a very good place for seafood and it has been a joy to eat good fish again.
I'm jealous that you have great local stuffed sole options! I've never had cheese stuffed sole. What kind of cheese is it?

4. chicken fajitas

Local chickens whole are on sale for 77 cents/pound. So I broke one down, putting the thighs and legs in the freezer, cutting the breasts into strips for fajitas, and putting the rest of the beast into a simmer for stock and bits of meat for doggie.

The breast strips are marinating in lime juice, garlic and cumin and some salt. Red and yellow peppers are sliced, and sweet onion, for quick sizzle. Two salsas are ready: a fresh made pico de gallo and a chunky mango jalapeno. Guacamole coming up, too. Flour tortillas for wrapping, and some grated cheese.

Soccer on TV. Perfect temp today -- 72 degrees!

And thank you for asking about mine...I've not been eating proper meals at all lately....I'm just grazing every few hours when I need to take my pills. I'm in one of those phases when all of my health problems are going wrong at once, and food isn't much fun lately.

I want to add more beans into my diet and I thought that hummus would be a good way to do it with less irritation to my stomach. Do you make your own?
