Thanks to the Super Bowl, there was a good deal on chicken wings, so I picked some up. I dont usually make them and, when Ive made them in the past, I just baked them and doused in hot sauce. Tell me a yummier way to make wings.

(24,241 posts)cook on the grill. You can steam them a little if you want then they will not need as much time on the grill.

(224 posts)My favorite way is to seperate at the joint. dredge in some corn starch mixed with salt/pepper. Put on a tray and put in oven at 250 for 30 min.. then back in at 425 for 50 min.I pull them out with about 20 min to go and drench with either buffalo sauce...or any other sauce you like...then put back for remaining time... they come out as almost fried...I prefer dry wings over wet

(2,338 posts)The cornstarch is key. After done, you can toss them in any sauce you like.

Spread in single layer on a cookie sheet, and put them in the fridge for 1-2 hours to set.
Then deep fry them those bad boys, with oil at about 370F til golden brown.
Then toss in a mix of Frank's hot(test) sauce and melted butter.
Dip in bleu cheese dressing, serve with celery.

(15,805 posts)You can use the whole wings, but I prefer to use the drumettes. Sometimes they are sold out and only the whole wings are left so I separate the pieces and freeze the wing parts to use in making soups.
To make the basic recipe Rinse 16 oz package chicken wings and thoroughly pat dry with paper towels. Place in a mixing bowl and toss with 1-2 Tbsp oil and 2 Tbsp lemon juice to coat. Sprinkle on 2 tsp garlic salt and 1 tsp lemon pepper seasoning to coat evenly.
Place on air frying basket, spacing evenly and air fry at 400˚F for 8 minutes. Turn, basting with any remaining oil and lemon. Cook 8 minutes more or until chicken wings are crisp and golden brown on the outside. Do not burn.
These wings can be served as is with ranch dressing or other dipping sauces. You can also coat the cooked pieces with your fave BBQ sauce and return to the air fryer until the sauce starts to caramelize. Baste the pieces with teriyaki sauce, enchilada sauce, chili sauce or Russian dressing to add more variety.

Retrograde
(10,129 posts)First, cut the wings into 3 pieces: save the little one with next to no meat on it for stock or soup. Steam the rest of the pieces for 20-30 minutes. About 20 minutes before you want to serve them, bake them in a hot oven, turning once. Toss in your favorite sauce: I make mine by combining tabasco, Tapatio sauce, and butter until it tastes right.
This preparation is a lot lighter than the deep-fried version - and I don't have a fryer anyway

I've also smoked them in a wok. Line the wok with heavy duty aluminum foil, put in a handful of uncooked rice, a handful of loose black tea, about half as much brown sugar, a couple of crushed star anise. I've used 4 chopsticks as a support, hardware cloth on top, chicken wings on that. Cover the wok with more foil, shaping a tiny opening for any steam to escape. Use an exhaust fan or do this outdoors. Half to 3/4 of an hour does the trick. It's best to remove the chicken outdoors, and dispose of the foil and smoking material outdoors or your trash will reek. The flavor is truly amazing.

(658 posts)I cook them on the grill. I place the charcoal way back in the grill and place the wings as far away from the heat as possible. They still cook fairly rapidly.
While they're cooking, I prepare the sauce. Equal parts hot sauce (I like Louisiana Hot Sauce) and butter.
When the wings are finished and the skin is crispy, I bring them in and toss them in the sauce. If I think they may still need a little cooking time, I'll turn the burner on low to medium low and let them cook a little longer.
Served with carrot and celery sticks and ranch dressing.
Easy peasy.
