Eggplant almond enchiladas. Mollie Katzen recipe.

Tossed green salad with radicchio, ruffly green, and watercress. Added lots of raw veggies, such as tomato, carrot, red and green pepper, red onion. Dressing is spicy ranch.

For dessert, tapioca pudding and a couple chocolate macadamia cookies. Hot Spicy Earth tea.

2. We're having a big slab of salmon...

...with a spicy mango chutney,
Steamed broccoli,
Sushi rice,
And my killer tahini sauce: tahini + tamari + rice vinegar + orange juice

4. Beef Tacos in a hard shell

I had a Skinny Cow ice cream sandwich after.

FLFC said he was hungry, but turned down everything except some of his cheeseburger from yesterday and some apple slices. His vision (and hearing) is so bad that as I approached him with a piece of hamburger he cowered and growled. A minute later he was apologetic and anxious. Perhaps the shower I took made it harder to smell me and know who/what that looming shape was.

5. Geschnetzeltes

With egg noodles and a salad.

Pretty good. Waiting for the person that posted they were having this to send me their recipe. The one that I found was very rich. It was good, but rich.

Couscous with a few add ins for flavor
Cauliflower steaks
