Deli Chicken so many ways to enjoy

My daughter brought me a rotisserie chicken last Sunday. I was glad to get it, but was a little concerned I couldn't eat it all on my own in a timely manner.

No worries. I had the drumsticks as snacks Sunday and Monday. Tuesday, I made peanut butter chicken with the thighs. Today, I used part of the breast meat to make a pot of curried chicken vegetable soup and the rest to make some Waldorf chicken salad. I seasoned the wings and heated them up as a hot wing snack.

I think I have enough food made to last till Sat. And enjoyed putting some tasty meals together.

(Add veges - carrots, celery, whatever) to pot with carcass, salt, pepper, herbs, water covering it, and 'simmer' for ### hours. Add potatoes to extent you want.

are turnips. They have a mild flavor that complements the soup, and are much less starchy than potatoes. Just peel and dice them and add them when you would regularly add potatoes.

I eat a lot of chicken, but the deli chicken is always so good I love thighs, drumsticks, and wings so they are a treat and I always eat them first.

Get a can or 2 of chicken broth, and a bag of frozen mixed, soup or stew vegetables. Put the broth in at least a 2 qt. pot, bring it to a boil, add the vegs, bring them to a boil, then turn down the heat and let them simmer till they're tender. simmer till tender. Add some cut up deli chicken and simmer till it is all heated through. You can add spices, such as salt, pepper, a dash of hot sauce, dried or fresh parsley, and other herbs. If you don't cook much, check the labels of processed food you like, and see what seasonings are listed. I'm a big fan of frozen vegetable blends and use lots of those. I found a seasoning called Complete and I use it on everything. It has MSG, so you might not be able to use it.

I add chopped onion, garlic, okra, and chopped cabbage. I love curry, so I usually put curry in. Today, I had a potato, celery and fresh carrots, so everything but the okra was fresh.

You can take a can of creamed chicken soup, gently heat it up without adding water, put some cut up deli chicken in and serve it over biscuits. You can use the refrigerated biscuits, or maybe deli biscuits. I have been on a low-carb diet for 15 months, so this meal is a treat. I make low-carb biscuits with coconut flour. I make my own cream sauce, but creamed chicken soup is a good, quick sub.

You can make a salad and top it with chunks of chicken. cheese, avocado and so on. I usually have salad instead of a sandwich, and stack everything I'd put in a sandwich on the lettuce.

You could make some chicken salad (cut up chicken and ranch dressing, cut up chicken and creamy Italian, or make your own with mayo, etc) and stuff a tomato. I cut a bit of the bottom off the tomato, and cut of the stem, then cut the tomato almost through 6 or 8 cuts. It'll open out and you can top the slices with your chicken salad.

Tacos. Or season pieces of the chicken with taco seasoning and have it with some vegetables. Mac and cheese with chicken mixed in. Have fun, be creative

Meals in advance to use everything. I start with sliced breast meat, veggies, mashed potatoes, and use up the juices for gravy. Next make stuffing mix and top with sliced breast meat all doused in gravy. Then the last slices for big club sammies. The thighs and wings get shredded for tacos, fajitas, taquitos or quesadillas.

Then I throw the carcass and any remaining bits in the instant pot to make it easy to pick off all the meat to make chicken noodle soup or creamy chicken soup with mixed veggies and dumplings.

There is nothing left at the end, but I've got at least six good meals out of that one rotisserie chicken.

I think the peanut butter chicken I make turned out better using raw boneless thighs. It is a stir fry recipe.

I put some veg oil, at least to coat the bottom, in a big frying pan to heat. In a small dish, mix together 1 tbs soy sauce and a heaping tbs of peanut butter for 2 thighs, and set aside.

About 1 thigh per serving. Cut each thigh into bite sized pieces. Sprinkle pepper and red pepper flakes to taste over the chicken. You can add salt, but with the soy sauce and peanut butter, it might not need extra.
Cut sweet onion across and then in quarters, then 8ths, like a pizza, separate the slices. You can use as much or as little onion as you want. I use about 1/2 of a medium onion.
I use about 1/3 to 1/2 cup of frozen mixed veggies per serving.
I like adding 1/4 cup of fresh celery into the mix, about halfway through cooking. I also like 3 or 4 sliced up green onions added about a minute before it is done. It'll be good with or without the celery and green onions.

Start cooking and stirring the chicken on medium heat, about 12 minutes total time. When the chicken is starting to turn color, add the raw sweet onions. About 5 minutes into cooking, add the mixed veggies. You can add more oil if you think you need it. About 1-2 minutes before it is done, add the soy sauce and peanut butter. Stir to coat the other ingredients. Remove from heat and serve hot, with noodles, rice or on its own. The mixture doesn't have a lot of sauce, just enough to coat and flavoe the other ingredients.

I found recipes for peanut butter online and adapted one or two to make something easy and tasty. I put these ingredients together so often, I don't measure. But it is the kind of mix you can put together to suit your taste. I learned that a lot of peanut butter can detract from the texture and appearance. I used the cooked thighs from the deli chicken and it is okay, but I like the texture of fresh chicken stir-fried better. I've also done it with breast meat stir fried, and I like the dark meat better. I like msg, so I put a sprinkle of that in when I cook for myself. Let me know if you like it

is boil the carcass with celery tops, carrot ends and onion to make some stock to strain and freeze for later.
