What's for Dinner, Sat., Febr. 13, 2021

Boneless chicken breast with mushroom sauce; angel hair pasta in cream sauce.

Ciabatta roll.

Tossed green salad with ruffly green lettuce, watercress, radishes, peppers, red onion, cucumbers, and tomatoes.

Dessert: Orange tea and a slice of roasted pineapple drizzled with maple syrup.

Your menus always read like an upscale restaurant's!

We're having:

Baked BBQ chicken thighs
Baked sweet potato
Mixed greens simmered in chicken broth with bacon

Dessert: Homemade cookies and cream frozen yogurt

The above menu is a spousal unit favorite type. He is a military brat whose parents were from Arkansas. I always tease him that you can take the boy out of the south but you can't take the south out of the boy. Truth!

Dried Italian sausages and hard cheeses with a variety of olives as an appetizer.

The pasta dish will be linguini in a white clam sauce. We brought a dozen clams back from the Outer Banks and froze them. (When you let them sit out, they open as they warm up.) So, the sauce will have garlic, olive oil, parsley, white wine, chopped up clams and a shot of hot sauce.

We'll also have a Caesar salad with anchovies, hard-boiled egg, Parmesan cheese and red onion.

Maybe some garlic bread.

Brandy by the fire for dessert.

We eat well but we don't spend a lot of money on our food, except for some special treats.

Generally, good healthy food is inexpensive if one shops carefully. For example, our local supermarket has packages of 3 heads of Romaine lettuce for $4.99 yet the store in the small city half an hour away charges $2.99. Accordingly, we shop carefully!
