What's for Dinner, Tues., Feb. 16, 2021

Hey, C & B friends, it's hard to write this post knowing so many of our fellow posters are in very, very difficult circumstances with this nationwide ice storm and extreme cold in areas that are not used to it. A hot meal is probably the farthest thing from their minds right now. Survival mode takes priority. I'm researching, making phone calls, and seeing what if anything I can do.

Here's what we're having for dinner:

--beef shortribs, roasted in the oven
--potatoes, cubed, roasted under the shortribs
--tossed green salad with chopped mango, avocado, bacon, red, green, and yellow pepper, red onion and scallions, plus pineapple that was "fire-roasted." Since I couldn't "fire roast" the pineapple in the oven, we used a hand-held torch on it before putting it in the oven.

The dressing for this salad is vinaigrette which I made using roasted jalapeno and pineapple. Sherry balsamic, olive oil, and honey. I used the immersion blender for this. Over the top of the salad were toasted pistachios.

Orange tea with agave for dessert.

1. comfort food: soup and sandwich

The soup is homemade. Using the leftover shin steak and braising liquid from Sunday, I added beef broth, carrots, celery, onions, diced tomatoes, bay leaf, and some broken-up whole wheat spaghetti.

Grilled cheese sandwich


dessert is homemade apple bread pudding.



Praying for the safety of all. It's so strange to me that it's so cold down south, and it's nearly 40 degrees here.

I am having chili. Basic chili only sub is ground turkey that I had in the freezer. I am in the cold front zone, currently 10 degrees, only dropping from here on out.

It was pretty hearty because it included the remains of a pot roast. I topped it with Parmesan. Later maybe some frozen blueberries with Greek yogurt for dessert.
