What's for Dinner, Fri., Febr. 26, 2021

Salmon, slow-roasted with grapefruit, oranges, and radishes. Served over bed of ruffly green lettuce and avocados. Dill cream sauce over the top.



I made cucumbers with red onion, dill, and sour cream dressing (also had buttermilk, crema Mexicana, and olive oil mayo). Here's a pic before I put the dressing on:



Carrot-zucchini souffle/pancake:



Blueberry kombucha to drink.

For dessert, coffee and chocolate peanut butter cups.

I'm such a coffee addict now. Just straight up black, strong & mellow.
It's weird how a year of Covid isolation changed my indulgences.

The salmon looks fantastic and we'll definitely try that. For tonight, I'm stealing your cucumber salad!

We're have stuffed red peppers. We're using equal portions of beef, veal and pork along with chopped onion, rice and spices for the stuffing.

Along with your salad, we've got some left-over mashed potatoes from the other night's feast.

Dessert will be apple slices with a caramel dip.

3. Leftover takeout

Every few weeks we order food from local restaurants that we like. Yesterday we tried some dishes from a Sichuan place. The servings were way more than generous: the eggplant dish and the pig trotters (a great delivery food - they're a bit messy to eat at a restaurant) didn't even look touched, and for some reason they sent a double portion of soup (we checked the receipt - only showed one order). So it's leftovers for dinner tonight - and probably tomorrow and the next day.

My palette won't even allow to enter my brain, the mere idea of kombucha.

But it certainly welcomes a glass of white wine as a compliment to grilled salmon with a few smokey wood chips tossed in the heat.

My all time fav takeout food.

There's only one place I buy it tho & it took awhile to locate that one, since every place has it's own way of making it.

It's a bit high on the red pepper flakes than what I'd prefer but the flavor is spot on.
I add coconut creamer which tones down the heat.
It's just sumptious ~

We're having chili I made last night. Turkey burger, sausage, black beans, and lots of peppers frozen from last year's crop. Good for a rainy evening.

13. Lasagna

TJ will be leaving for work soon. Some leftover lasagna and tossed salad. TJ made the food as I'm recovering from my second eyelid surgery. I look much worse this time, so I can't get away with claiming I won that bar fight. If this works I'll be rid of the eye irritation that has bugged me for more than a year.

FLFC is complaining, but has turned down treats I have offered. I suspect that something will suit his fancy later tonight. He probably wants something other than food, but I haven't figured out what.
