We're trying a new vector on chicken 'n dumplings.

Partly inspired by a Cajun c C 'n D recipe from the late Paul Prudhomme.
Dredge the chicken in an herb mixture and pan fry.
Cool and pick.
Make a roux and that's the base for the liquid.

Instead of his dumplings we're using gyoza, pot sticker dumplings.
I'll letcha know...

Not enough liquid/sauce and it was too thick.
We'll cut it with some chicken broth.

4. I have two ways that I make chicken and dumplings

Southern Style - Stew chicken, Remove chicken, de-bone and have chicken meat ready. In large skillet melt some butter, add 3 or 4 tablespoons flour, stir and cook a few minutes. Add chicken broth with a 1/3 of the liquid as milk (about 4 or 5 cups total). Add box of frozen succotash(corn and green lima beans), let cook on low until vegggies are cooked. To finish - add the cooked chicken and drop dumplings on top of the broth (make a soft biscuit dough),sprinkle a little chopped parsley on top of the dumplings. Put lid on skillet, cook on med-low until dumplings have risen and start to look a little dry. Let stand a few minutes before serving. This is my kids favorite.

Pennsylvania-Dutch style - This is one I make most often Cook chicken - de-bone, save broth. Like to add some milk to the chicken stock, season well, put broth and cooked chicken in large skillet. Heat broth to low boil, add thin slices of a raw potato. Let simmer a few minutes to cook the potato slices, then lay noodles on top, cover and simmer on low until noodles are cooked.

Home made noodles are a must for dish and are so easy, I don't even use a bowl, just put the flour and salt on my breadboard, make a heap, put the hole in the middle to hold the egg and start working the eggs and water into the flour. To make Noodles, use about 1 1/2 cup flour. 1//4 teaspoon salt , mix well make hole add an egg. I then use the egg shell to add water to the flour, keep adding water and mixing until firm dough is formed, don't want a soft dough. or noodles will fall apart when added to the stock. Roll out the dough and cut into squares or noodles, spread on clean tea towel to dry while the chicken is cooking.

For either dish, need to have some homemade cranberry sauce to serve on the side.
