Was looking for a real basic soup recipe on line and came across this. It didn't give quantities of ingredients and directions were simple as could be so I ad libbed my own quantities and it came out very well.
Ingredients
4 medium sized potatoes, peeled and cubed
4 eggs
water
salt and pepper
Directions
Using a 1.5 quart pot, add the potatoes and enough water to cover, should be about 1 quart combined, and boil till done
Add the 4 eggs and stir briskly
Boil a little bit longer until it appears egg mix is done
Remove from heat and stir in salt and pepper to taste
As I had nothing to eat for the day, I ate the whole thing with crushed saltine crackers. It was quite good in my opinion.
Next time I make this, I think I'll go wild and mash the spuds when done and before adding the eggs to make a creamy potato and egg soup
