What's for Dinner, Sat., Mar. 6, 2021

Appetizer is lobster bites.

Next up, a plate of roasted cranberry beans. Here they are before roasting.



After that, pasta amatricia. Rigatoni with pancetta, onion, tomato, pepper.

Dessert: The RG is having pistachio gelato. I'm just having sweet and spicy earth tea.

baby spinach, blueberries, cuke, tomato, boiled egg with ranch.

It is a work night for TJ so no dinner plans.

I'll figure out more later.

with ham and peas baked in. Iceberg lettuce/tomato salad with Western dressing. Envy apple. Make Fudge not War ice cream from Aldi. And homemade pizzellis that I make on the iron my mom bought in 1962 from a place in Cincinnati and it still works! Made in America really meant something back then.

First up, roasted red peppers in garlic and olive oil topped with filets of anchovies. Toasted garlic bread on the side.

Next, a small portion of ziti with a homemade spicy red clam sauce.

Then a green salad with Romaine lettuce, cherry tomatoes, slices of green pepper, black olives and slices of cucumber.

The entree is soft-shell crabs sautéed in white wine.

Mango sorbet for dessert.

In made pork chops...on sale this week...I breaded them lightly with gluten free Panko and had mashed potatoes and mixed vegetable. I made spice cake for dessert and served it with whipped cream instead of icing...added extra ginger and Greek yogurt...tasted like gingerbread cake really...very tasty.

Sounds great and I bet the yogurt made it moist.

I would rather have whipped cream too. Good idea. Cream cheese icing would be good too.

I have some Scimeca's spicy meatballs to bake. I'm searing some scallops. Cooking some garlic, onions, red bell and sun-dried tomatoes in the olive oil from the tomato jar. Pour in jarred arrabiata, add asiago, butter and simmer. Add the meat back in and top with grated pecorino, sliced green onion and fresh basil.

A dozen Dabob oysters farmed in Hood Canal.
I made cocktail sauce with Portland Worcestershire, also served with chopped onion fine and sliced lemons.
California role sushi and edamame.

Black Raven Kitty Kat Blues beer. It has a wonderful blueberry nose. MmmmmMmMmmmmm


Those cranberry beans look awesome! Jelly!
