Black beans and rice

Ingredients

1 can of black beans, drain and reserve juices
1 can of diced tomatoes with juices
! Tbsp. olive oil
I medium onion chopped
1/2 tsp of Italian seasonings or thyme
1 tsp of garlic salt
3 Tbsp. of apple cider vinegar
1/2 tsp of hot pepper sauce
2 cups of cooked rice

Directions

Cook rice and set aside
In large skillet, heat olive oil, add onion and sauté.
Stir in diced tomatoes with juice, beans, Italian seasoning, garlic salt. Cook about 3 minutes on medium high and stir occasionally.
Add vinegar, hot sauce, and reserved juices and simmer for 5 minutes. Stir occasionally.
Add cooked rice, mix well and continue to simmer and stir till juices are absorbed and rice is heated thoroughly.

made this last night and I liked it. The apple cider vinegar and Italian seasoning gives it a nice touch. It made about 4 cups so i ate the whole thing.

6. I mistakenly bought some Goya tomato paste when I spotted tomato paste in the

half off bin at the grocery store. I think I got about 10 cans of it for about 35 cents a can. Much to my dismay it actually tastes pretty good. Damn Trumphumpers giving everything a bad name.

3. While my wife is in the hospital, I'm trying out recipes that are easy to make

and that the recipes use ingredients that don't require refrigeration and I can cook the meal using the stovetop burners on my LP gas oven.

In case of emergency like power going out for an extend time, I can still cook a variety of tasty and nutritious meals.

5. My Cuban friends add a tsp or two of ground cumin seed and olives..

A fatback or slab bacon for the mouth feel and taste. I try to not eat meat so I just amp up the flavor with a good olive oil
