What's for Dinner, Tues., Mar. 9, 2021

Appetizer: crackers with egg salad and sriracha.

Beef roast with carrots, potatoes, garlic, and onions.

Dessert: The RG is having sea salt gelato and I'm having decaf and a couple squares of chocolate.

1. Eggplant parmigiana

Our neighbors are coming by for a socially distanced dinner party. (All of us have been vaccinated but we'll wear masks and keep our distances, of course.)

Appetizer: Crudités of celery, cucumbers, cherry tomatoes, various olives, roasted peppers, pickles, baby carrots and slices of green pepper with a ranch-type dipping sauce.

Entree: Eggplant parmigiana with spaghetti with a basil & garlic tomato sauce. Chianti.

Dessert: Vanilla ice cream with home-baked chocolate chip cookies.

I am so looking forward to the days when we can get back together with our friends, too. In fact, they called the other day to see if we could get together for dinner, but it was contingent on everyone having the vaccine. Well, I am the only one without the shot. So since that time, our friends have been calling around and networking to get me a vaccine appointment.

Your menu looks delicious !!!

We had almost forgotten what it's like to eat meals with others!

but I signed up on the leftover vaccine site and I called CVS this morning who hung up on me 10 times!

A neighbor says his mom knows of a place so he might get back to me on that. Keeping fingers crossed.

Anyway, I knew you'd have a great time and it sounds like you did.

Thin sliced boneless pork chops pan fried (no breading)
Stewed apples
Broccoli
Cabbage (from a can - we are using our backup foods before they get too old).
Baked sweet potato

FLFC ate his steak-uum earlier and was asleep when we ate.
