What's for Dinner, Thurs., Mar. 11, 2021

Appetizer: Jalapeno poppers and lobster bites.

Salad: Tossed green with radishes, carrots, scallion, walnuts. Arugula, romaine, and spinach. Honey mustard dressing for me; vinaigrette for the RG.

Main course: combined rigatoni and penne from the Campania region of Italy. Asparagus (blanched), pancetta, yellow pepper, celery.

Sauce: sauteed pancetta in long strips. Added thinly sliced onion into the mixture. Set aside. Prepared celery leaves and sweet peppers thinly sliced, went into the mixture; set aside. Blended (immersion) some of the peppers and onions; added more pepper strips. Added ricotta, half cup of whipping cream, parmiggiano reggianno and blended.

Cooked pasta. Drained, leaving 1/2 c. of pasta water. Added olive oil onto the pasta and water.

For dessert: Ice cream bars from WF-- lemon sorbet surrounded by vanilla ice cream, covered with white chocolate. Decaf coffee.

Okay, we're going to cheat and use Tater Tots. Frozen Alaskan Pollack for the fish with a beer batter.

Vanilla Ice Cream and fresh strawberries for desert.

I've been doing the cooking and baking...well, hell, everything here... for the past 45 years of wedded bliss. The wife....not good at housework or cooking, but appears to enjoy my cooking.

Ok with the right seasoning and topping. Just don’t call it pizza. He is a vindictive god.

You do love your pancetta, don't you, NJCher! That dinner sounds incredible and once again, I envy your salads. Enjoy!

We're in Manhattan for the weekend and we're getting Mexican food delivered tonight from the restaurant down the street.

Today is the one year anniversary of our retreat from the pandemic so we're sort of celebrating that we've survived so far!

Jumbo lettuce salad with jalapenos, garbanzos and tomatoes. Tossed with a small amount of basil vinaigrette.

I pulled the shorts out from last year and they barely fit.

So this is the way.

We're having a doctored-up frozen pizza: sausage, peppers, onions, and extra cheese.


There's a boat-load of ice cream in the fridge if we decide to have something sweet later on.

garlic in it. We had meatballs with it (homemade) and fruit salad. But sadly we had no dessert. We have been trying to lose 'quarantine' weight so not making or buying sweets. This weekend might bake a crustless pumpkin pie or make pudding. Only on treat allowed on Weekends.

or, a classic northeastern French dish made with what happens to be in the house: sauerkraut, napa cabbage, carrots, potatoes, turnip, the meat from leftover ribs, and a hot link.
