Simple, use part toasted sesame oil and part high smoke point oil. Just to die for.

I boil the corned beef on March 16th and then put it in the frig overnite. I save the water to cook the carrots/cabbage on March 17th. I slice and defat the beef right before we eat it. Much easier to slice nicely against the grain. That is my story and I am sticking to it. Happy St. Pat's everybody!
such a good idea, and I don't know why I never thought to do that.
