What's for Dinner, Mon., Mar. 22, 2021

The RG bought fresh fish at the market this morning and invented a recipe. The seafood is cod and shrimp, which he served over a bed of fresh spinach. The sauce he made for the fish was tahini and lemon juice with red pepper flakes, red onion, garlic and cumin.

To go with it, we had vegetable terrine. This is sliced zucchini, a little carrot, and potatoes he hld together with ricotta cheese, goat cheese, and a little sour cream.

For dessert, a slice of yellow cake which had been warmed in the oven. On top, cherry yogurt and walnuts. Orange tea.

I'm making a peanut sauce with fresh ginger, garlic, peanut butter, soy sauce, rice wine vinegar, sriracha and sugar.

Air frying the chicken after coating with oil and salt. So far the sauce is delicious, dipping celery in it and waiting on the wings to get done.

I used a bread recipe called Granny's gluten free bread and it turned out very well. I had a salad with blue cheese and pears as well...no dessert. But we did have coffee.

Baby back ribs, put in brine with vinegar, garlic and red pepper flakes overnight and then very slow baked. At the end a coating of tomato based BBQ sauce was applied and the ribs were broiled. They turned out very good. I never seem to make them the same way twice. As usual I shared them with FLFC's buddy in back.

I had leftover Brussels sprouts and squash as sides.

FLFC has been extra picky lately. It is concerning to us. I gave him some small apple slices and peanut butter licks and he ate a bit, but he rejected all the usual treats. TJ tells me she made him a hamburger earlier and he ate some. He bugged me as the ribs' aroma filled the kitchen, but then he didn't eat any.
