What's for Dinner, Fri., Mar. 26, 2021

Steaks, which have been marinated in soy, salt, and pepper.

Stuffed yellow zucchinis. Filled with ground pork, eggplant, onion, and seasonings which I can't remember.

Asparagus, orange, and spinach salad in sesame-ginger-orange dressing and topped with toasted almonds.

Dessert: Banana pudding. Orange tea.

2. My dog Sophie is ill so drove up to Bedford to our vet...he took care of Benjy and is wonderful...

she has an ear infection and tonsillitis. She is on antibiotics and should be fine. It is an hour and fifteen minutes from the Austintown House...so when I got back Hubs had made dinner! chicken, baked potatoes and green beans cooked in olive oil, garlic and onion...also salt and pepper. No dessert because it is not Saturday or Sunday. Tomorrow I will make some chocolate pudding for me and some spice cake for hubs. We are trying to undo the waistline damage from the quarantine so we eat dessert only on Saturday and/or Sunday. It seems to be working. Your steaks sound lovely.

3. We had a beef roast

We cooked a beautiful 3-lb. rump roast to medium-rare perfection. The Landlady(!) made a mushroom gravy from the drippings. Mashed potatoes and a small green salad. Vanilla ice cream for dessert.
