Then I added some olive oil to the pan, and sautéed the veggies, starting with the ones that needed to cook the longest, and added some celery salt and wine along the way. When everything was sizzling, I put the pork back in on top of the veggies, covered, and simmered for about 25 minutes. It turned out very well!

I used a McCormick's spice mix as the basis of a dry rub, holy shit is this salty.
I am going to have to trim the beautiful crust off.

I just ate at work and shouldn’t have– now I need nap and still have 1.5 hours to go, plus the 30 min ride home.

A little Lawry's seasoned salt, Lawry's seasoned pepper, and a hint of cayenne. Simple and delicious, but yeah some fat.

I have an avocado and I seriously contemplated just having the avocado alone, with salt, pepper, and maybe a drizzle of olive oil.

The fat part doesn't bother me. Avocado fat is mostly monounsaturated and is high in oleic acid. That's the same acid that makes cooking with olive oil healthier than cooking with most fats.

And as far as calories go, I think they're only around 250-300 calories, so that's a pretty good calorie count for an evening meal.

Sole almondine with rice & peas.

Spinach salad with mushrooms, crumbled bacon, slices of red onion and a vinaigrette dressing.

Mixed fruit for dessert.

We had a pretty routine dinner of random protein from the freezer, which is stir fried with random vegetables from the crisper, covered with random sauce from a bottle, and served with some kind of starch. Tonight was chicken with zucchini and red bell peppers in orange sauce served with rice.
