What's for Dinner, Fri., April 2, 2021

I saw the most beautiful Greek salad at a takeout place around here. It made me hungry for one, even though I didn't realize it at the time. I have all the ingredients for an equally fabulous salad, so that is what I am making. It will have tossed greens of romaine and spinach, kalamata olives, artichokes, red onion, cucumbers tossed with olive oil and dill, and goat cheese. Lots of it! Also pea shoots from my garden.

And maybe a slice of pizza later, if I'm still hungry.

A mug of Spicy Earth tea for dessert. Maybe a chocolate chip biscotti.

Cooked very slow. The slower the chicken is cooked, the more tender. It just fell apart.
